Chocolate brownie recipes
Ingredients
- 87g unsalted butter (plus more for greasing)
- 112g dark chocolate (in peices)
- 100g catser sugar
- 1/5 medium eggs seperated
- 32g plain flour
- 25g chopped pecan nuts
Method
- 1. Heat oven to 180C/fan 160C/gas 4. Butter a 20-25cm cake tin and line with greaseproof paper. Place 3oz of the chocolate, plus the butter and sugar in a heavy-based pan and heat gently until melted, stirring occasionally. Leave to cool.
- 2.Whisk the egg yolks into the chocolate mixture, then add the flour, nuts and the remaining chocolate. Whisk the egg whites until they form soft peaks, then gently, but thoroughly, fold into the chocolate mixture.
- 3. Pour into the prepared tin and bake in the centre of the oven for about 35-40 mins until crusty on top. Leave to cool, then run a knife around the sides and remove from the tin. Dust with icing sugar and serve warm with custard or ice cream or cold with cream.

- 200 gm Butter unsalted
- 200 gm Dark Chocolate (70%)
- 3 eggs
- 300gm granulated sugar
- 2 tsp Vanilla Extract
- 125 gm plain flour
- 1 pinch salt
Method
- Preheat oven to 180 deg C / fan 160 deg/ gas 4
- Grease and line 20 by 30 cm rectangular baking tin, 3-4 cm deep, with greaseproof paper.
- Melt butter and chocolate over a bowl over a pan of simmering water or gently in the microwave.
- With a n electric mixer, beat together the eggs, sugar , vanilla extract and salt till lovely thick and creamy.
- Mix in the melted chocolate and butter. Finally stir in the flour.
- Pour into the baking tin and cook for above 25 mins till top is cracking and centre is just set.
- PS: Give the brownie a double chocolate fix by adding 150 gm chopped milk/ white chocolate chunks before baking.

Ingredients
- 300g Dark Chocolate (70%)
- 375g Butter
- 100g Plain Flour (sieved)
- 125g cocoa powder
- 525g caster sugar
- 1 ½ tsp baking powder
- 6 eggs
- greaseproof paper
- approx 40cm x 25 cm baking tray
- double cream (to serve)
- Icing Sugar to dust
Method
- 1. Melt the Chocolate and butter over a bain marie.
- 2. In a bowl or Kenwood, mix the dry ingredients.
- 3. When the butter and chocolate have melted, add it to the dry ingredients and mix until well combined.
- 4. Add an egg one at a time and beat.
- 5. Grease the tray with butter and place the greaseproof paper on the base.
- 6. Add the mix and bake at 170C (fan)/180 (electric) for 25 minutes. Check with a sharp knife in the middle of the brownie before removing from the oven to check that it is cooked all the way through. Serve with double cream.
