Ingredients
- 4 oz self-raising flour
- 4 oz caster sugar
- pinch salt
- 2 oz cocoa powder
- 2 oz butter/margarine
- 1 (beaten) egg
- 4 tbsp milk
- 1 tsp vanilla essence
- 4 oz soft brown sugar
- quarter pint hot water
Method
- 1. Place flour, sugar, salt and 1 oz cocoa into a mixing bowl.
- 2. Melt butter on high for 45 seconds.
- 3. Add melted butter to flour, along with egg, vanilla essence and milk. Beat well.
- 4. Pour mixture into 8" souffle dish or medium-sized, high-sided microwave-proof dish.
- 5. Mix together brown sugar and remaining 1 oz cocoa and sprinkle over top of mixture. Pour over hot water until covered.
- 6. Cook on high power for 5-6 mins or until set on top.
- The pudding will separate on cooking, giving a chocolate fudge sauce at the bottom. Serve with cream, custard or ice-cream.
- Tip: Ingredients can be weighed out in advance and the pudding cooked before clearing up the main course.

- CAKE MIX
- 3oz self raising flour
- 2 Tablespoons Cocoa Powder or Drinking Chocolate (or mix of both)
- 4oz Butter
- 4oz Sugar
- 2 eggs
- A drop of Milk
- SAUCE
- 4oz brown sugar
- 2 Tablespoons Cocoa powder or Drinking Chocolate ( or mix of both)
- ½ pint Hot water
Method
- Turn the oven on 195 degrees C first.
- Cake mix:
- Add all ingredients to a food processor and whizz for a min til smooth - the drop of milk makes it easier to process - but just a drop !!
- Sauce
- In a liquid measuring jug - measure the hot water (from a kettle but not boiling), add the other ingredients to it and stir until all dissolved.
- Put the cake mix first into a 10 cm deep pyrex dish then,
- Gently pour the sauce over the top.
- You'd think it'd dissolve but it doesn't!
- Place in an oven for 40 mins at 195 degrees C.
- ....the cake rises through the sauce .. and the gorgeous chocolate "goo" ends up at the bottom. Heaven! Oh thankyou Mum!

Tips
You will know this is cooked when the top still looks moist but does not wobble when the pudding is shaken.

- 185g Dark chocolate (around 60%)
- 185g Butter
- 3 Eggs
- 3 Egg yolks
- 6tbsp Caster sugar
- 3tbsp Plain flour (sifted)
Method
- Melt the chocolate and add to the butter.
- Whisk the eggs, yolks and sugar until thickened. Whisk in the chocolate mix and fold in the flour.
- Divide the mixture between 6 buttered ramekins and bake for 6-10 minutes at 230 degrees until the outside is cooked but the centre is soft. (the top still looks moist but doesnt wobble when the pudding is shaken)

I tried this recipe and was very impressed, it made a nice pudding, I liked the melting chocolate bit in the middle. It was fairly easy to make, thanks for sharing!

This sounds great.
Does the sugar in step 1 only relate to the caster sugar and the sugar in step 5 contain all of the brown sugar then?
I'm looking forward to trying to make this though I don't think I have a suitable dish, am trying to think of alternatives, any suggestions?
