    Ingredients

    • 125g Plain Chocolate
    • 3 Tablespoons Water

    Method

    1. 1. Break the chocolate into bits and place them in a small bowl with the water.

    2. 2. Stand this over a pan of simmering water until the chocolate melts. Stir well.

      • 6 oz plain chocolate. chopped
      • 2.5 fl oz double cream
      • 1 tbls golden syrup
      • 1 fl oz Milk

      Method

      1. Put all the ingredients into a small non-stick pan, heavy based preferably. Heat gently, stiring occasionally until the chocolate has melted. DO NOT LET BOIL. Stir until smooth and cool slightly before pouring over ice-ceam, pudding etc.

      2. Chocolate & Caramel - add 2 oz toffees or use ready-made toffee sauce, adding towards the end.

      3. Chocolate & Nuts - add 4 oz of any nuts.

      4. Chocolate Liqueur - add 4-5 tbsp Cointreau, brandy or whatever have or fancy. Add towards the end.

      5. Chocolate Mint - add 3 tbsp creme de menthe or replace chocolate with any mint chocolate bar. Likewise for a white sauce use white chocolate.

      6. Mocha Sauce - dissolve 2 tbsp instant coffee in the milk before the rest of the ingredients.

        Ingredients

        • 8oz Min 50% Coco Bean Dark Chocolate
        • 6oz Butter
        • 6oz sugar
        • 1pnt Double Cream
        • 3tbls Brandy

        Method

        1. 1. Put pan of water on to boil. Place chocolate and sugar into a bowl and place on top of pan making sure no water can get into your mix.

        2. 2. When the chocolate has melting add the double cream brandy and butter.

        3. 3. Once the butter has all melted give it all a good stir and it is ready to use.
