Coconut cake recipes
Ingredients

- 4ozs margarine
- 1 cup Sugar. granulated
- 1 ½ cups Dessicated Coconut
- 1 cup milk
- 1 eggs. beaten
- 2 cups self raising flour
Method
- Put margarine, sugar, coconut and milk into a large saucepan. Bring to the boil then simmer fpr 4 minutes.
- Allow the mixture to cool in the saucepan.
- Add the beaten egg and sifted flour and a pinch of baking powder.
- Mix together well.
- Pour all ingredients into a greased 2lb loaf tin.
- Put in the oven at 190c (less for a fan oven)and cook for 50 minutes.
Ingredients
- 180g Clover Butter
- 180g Caster Sugar
- 3 Eggs Medium sized
- 80g Self Raising Flour Sifted
- 80g Raspberries
- 4 tbsp. Milk
- 80g Desiccated coconut
- 30g Ground Almonds
Method
- 1. Preheat the oven to 190ºC/Fan 170ºC/ Gas mark 5. Put the butter and caster sugar together in a bowl and whisk together until fluffy.

- 2. Gradually whisk in the eggs. Place half of the raspberries into the flour and gently fold in the milk to form a creamed mixture.
- 3. Fold in the desiccated coconut and the almonds.
- 4. Spoon the mixture into the paper cases, placing the rest of the raspberries over the top.

- 5. Bake for 15-20 mins until light golden and risen. Cool on a wire rack. Dust with sieved icing Sugar.

- 6 ozs Self-raising flour
- 5 ozs granulated sugar
- 2 ozs Dessicated Coconut
- 3 ozs butter or margarine
- 1 egg
- 4 tablespoons milk
Method
- Rub butter into flour till at breadcrumb stage.
- Stir in sugar and coconut.
- Add egg and milk
- Put spoonfuls in paper cases
- This quantity makes 16
- A glace cherry can be put into each one.
- Bake at 190c gas mark 6 for 15mins.
