    Ingredients

    • INGREDIENTS
    • 4ozs margarine
    • 1 cup Sugar. granulated
    • 1 ½ cups Dessicated Coconut
    • 1 cup milk
    • 1 eggs. beaten
    • 2 cups self raising flour

    Method

    1. Put margarine, sugar, coconut and milk into a large saucepan. Bring to the boil then simmer fpr 4 minutes.
    2. Allow the mixture to cool in the saucepan.
    3. Add the beaten egg and sifted flour and a pinch of baking powder.
    4. Mix together well.
    5. Pour all ingredients into a greased 2lb loaf tin.
    6. Put in the oven at 190c (less for a fan oven)and cook for 50 minutes.

      Ingredients

      • 180g Clover Butter
      • 180g Caster Sugar
      • 3 Eggs Medium sized
      • 80g Self Raising Flour Sifted
      • 80g Raspberries
      • 4 tbsp. Milk
      • 80g Desiccated coconut
      • 30g Ground Almonds

      Method

      1. 1. Preheat the oven to 190ºC/Fan 170ºC/ Gas mark 5. Put the butter and caster sugar together in a bowl and whisk together until fluffy.

      2. 2. Gradually whisk in the eggs. Place half of the raspberries into the flour and gently fold in the milk to form a creamed mixture.

      3. 3. Fold in the desiccated coconut and the almonds.

      4. 4. Spoon the mixture into the paper cases, placing the rest of the raspberries over the top.

      5. 5. Bake for 15-20 mins until light golden and risen. Cool on a wire rack. Dust with sieved icing Sugar.

          Gorgeous made two batches in three days as family love them,really easy to.

        • FOR THE CAKES
        • 6 ozs Self-raising flour
        • 5 ozs granulated sugar
        • 2 ozs Dessicated Coconut
        • 3 ozs butter or margarine
        • 1 egg
        • 4 tablespoons milk

        Method

        1. Rub butter into flour till at breadcrumb stage.
        2. Stir in sugar and coconut.
        3. Add egg and milk
        4. Put spoonfuls in paper cases
        5. This quantity makes 16
        6. A glace cherry can be put into each one.
        7. Bake at 190c gas mark 6 for 15mins.
