Ingredients
- 50g butter or margarine
- 50g Veg fat
- 75g brown sugar
- 1 egg lightly beaten
- 2 tbsp warm honey
- 175g plain flour
- ½ tsp bicarbonate of soda
- 75g currants
- to taste Honey for filling
- for dusting icing sugar
Method
- Pre-heat oven to 180 degrees.
- Grease 2 baking sheets
- cream the fats and sugar until ligth and fluffy.
- Gradually add the egg and honey.
- Seive the flour and bicarb into the mix. Add the currants.
- This will make a dough. Chill until hard.
- Spoon mix into 24 rounds on the baking sheets. Bake for 12 mins. When baked, sandwich together with the honey and sprinkle with icing sugar.

hi i would love to make these but not sure of how much flour and other ingredents to use can you update what is needed thanks
Ingredients
- 250g plain flour
- 125g margarine or butter
- 75g castor sugar
- 1 teaspoon baking powder
- 1 egg
- 25g cocoa powder
Method
- 1.Use a wooden spoon to mix the flour, butter, cocoa powder, sugar and baking powder until it looks like breadcrumbs. Add the egg and mix with a wooden spoon until it forms a dough.
- 2.Sprinkle a little flour onto the work surface and roll out the dough with a rolling pin. Do not press too hard. Dip the cutters in the flour before cutting out a selection of shapes.
- 3.Place the cookies on a greased baking tray. Bake for 15 minutes at 180oc,350of, gas mark 4. Allow to cool and decorate with icing,silver balls,cherries and sprinkles.

- 75g Soft Light Brown Sugar
- 2 tbsp Syrup
- 175g Self-raising flour
- 100g Chocolate Chips
- 2 tbsp Milk
Method
- 1. Heat Oven to 180 degrees C, Gas mark 4. Grease two baking trays.
- 2. Beat the margarine until soft, add the sugar and cream together until light and fluffy.
- 3. Stir in the syrup,flour,chocolate chips and milk and mix wel.
- 4. Place spoonfuls of the mixture on the prepared trays and bake for 8-10 minutes. Remove from the tray immediately and place on a wire rack to cool.
