    Description

    My wife gave me the original idea for this recipe, but swears blind that she's no recollection of it now. Seems to work, though, despite this inauspicious start...

    Method

    1. 1. Start steaming the potatoes.

    2. 2. While they're cooking fry onions until brown.

    3. 3. Cut corned beef into smnall cubes and add to onion.

    4. 4. Add herbs, gravy, puree and Worcester sauce.

    5. 5. Bring to simmer and add peas.

    6. 6. When potatoes have been steaming to 12 to 15 minutes remove from heat and layer in a medium casserole dish, alternating with the corned beef/onion mix.

    7. 7. Finish on a potato layer and top with grated cheese.

    8. 8. Place in medium oven and cook until starting to bubble and cheese is melted.

    Tips

    Serve with veg of choice. Don't worry that the corned beef and onions disintegrate into a savoury sludge. They're supposed to.

    • 800g Peeled sliced potatoes
    • 1 medium onion
    • ½ tsp mixed herbs
    • 1tbsp tomato puree
    • 1 good splash Worcester sauce
    • 1 x 340g tin corned beef
    • 200ml pre-fab beef gravy
    • 1 handful frozen peas
    • 50g grated cheddar cheese

      Method

      1. 1. Mix mashed potatoes and corned beef.

      2. 2. Heat half the oil in a frying pan, then add the potatoe and beef mix, until thoroughly heated through.

      3. 3. In a separate frying pan, fry the eggs one at a time.

      4. 4. Serve corned beef hash in the centre of the plate, an egg on top of each serving, steamed vegetables to one side.

      • 16-20 tbsp Leftover Mashed Potato
      • 4-8 tbsp Olive Oil
      • 4 Eggs

        Method

        1. Peel potatoes, chop up & place in a sauce pan of water.
        2. Add the sliced onion & boil for approx 15-20 mins until soft.
        3. Drain & add corned beef - mash together.
        4. Place in a heat proof dish & top with grated cheese
        5. Place in pre-heated oven (180 degrees C - fan oven)
        6. Heat for approx 10 mins until cheese melted & brown.

        7. Serve with Veg

          Method

          1. Cook potatoes in boiling water for 15-20 minutes until tender, drain and roughly crush with a potato masher.

          2. Meanwhile, heat the oil in a large frying pan and fry the salad onions for 1 minute. Add corned beef and crushed potatoes and fry for 2 minutes. Season to taste and stir in the parsley.
