      I add grated carrot to most saucy things now - always trying to get some extra veg in a meal somehow! Works really well in bolognaise too.

    Ingredients

    • 500g Minced Beef
    • 2 Onions - chopped
    • 3 Carrots - grated
    • 1 Beef stockcube
    • 100g Peas
    • 1 Tin baked beans
    • 750g Potatoes - cubed
    • ½ Large swede - cubed
    • Large knob Butter
    • To taste Salt &, Pepper

    Method

    1. 1 - Brown the Minced beef and onions in a pan, after around ten minutes, add the grated carrots and crumble in the stockcube. Add enough water to cover the mince and leave to simmer for a few minutes.

    2. 2- Place the potato and swede in a pan of water, bring to the boil and cook until ready to mash. Drain and mash with butter, salt and pepper. Set aside until the meat is ready.

    3. 3- Add the baked beans to the mince along with the peas. Take off the heat and transfer to a large oven proof dish.

    4. 4- Top the mince with the mash - with a fork make the topping rough and raised, drizzle with a little olive oil, this will help it get crispy. You can also add some grated cheese.

    5. Bake in a medium oven for 30 minutes. Serve with brocolli or veg of choice.


    6. You can freeze this dish well.

      Ingredients

      • ½lb Minced beef or lamb
      • 1 onion chopped
      • 3 cloves garlic chopped
      • 1 can Baked Beans
      • 3 carrots diced
      • 2t Medium curry powder
      • 1t Chili powder (optional)
      • 1t Mixed spice (optional)
      • 1 Beef stock cube
      • 2t Bisto or flour
      • 3 Potatoes for mashing
      • ½c Cheese, grated
      •  Butter or Margerine
      •  Milk

      Method

      1. Mash potatoes adding butter and milk for a stiff mixture.

      2. Saute onions and garlic.
      3. Add minced beef and brown.
      4. Add spices, stock, carrots and baked beans (you may want to discard some of the sauce).
      5. Simmer until the mixture is not too runny.
      6. Add Bisto (and sour cream if desired) and simmer for a minute.

      7. Pour the mix into an ovenproof dish and spread the mashed potato on top, tucking in at the sides to prevent the filling bubbling up. Add the grated cheese.
      8. Bake for about 30 minutes or until the top is browned and slightly crisp.

        • 500g Minced beef
        •  
        • VEGETABLES
        • 4 baking potatoes
        • 2 Onions
        • 3 Carrots
        •  
        • LIQUID
        • 250ml beef stock
        • 100ml semi-skimmed milk

        Method

        1. Preheat the oven to 180oC, gas mark 4.

        2. 1. Peel and quarter the potatoes. Boil in salt water until tender.

        3. 2. Heat 1 tbsp olive oil in a pan and fry the chopped onions and diced carrots until tender. add the minced beef and cook. Stir constantly. Once cooked through season with salt and pepper and add 250ml of beef stock.

        4. 3. Drain and mash potatoes. Add 100ml of semi-skimmed milk. place the mince in an ovenproof dish and cover with the mash. cook in the oven for 20 minutes until the pie is hot and golden brown in colour.
