    Ingredients

    • 2 tbsp olive oil
    • 1 garlic clove peeled and crushed
    • 1 tbsp ground cumin
    • 1 tsp ground coriander
    • 1 tsp paprika
    • 350ml chicken or vegetable stock
    •  Good pinch of saffron strands
    • 6 salad onions trimmed and thinly sliced
    • 225g cous cous
    •  Coarsely grated zest and juice of 1 lemon
    • 2 red chillies deseeded and very finely chopped
    • 2 tbsp raisins
    • 2 tbsp pomegranate seeds (optional)
    • 55g pine nuts toasted

    Method

    1. Heat 1 tbsp olive oil in a large, lidded pan over a medium heat. Add the garlic, cumin, coriander and paprika and fry over a gentle heat for 1 minute, stirring.

    2. Add the stock and saffron and bring to the boil. Add the salad onions, and then pour in the couscous in a steady stream and give it a quick stir.
    3. Cover the pan with a tight-fitting lid, remove from the heat and set aside for 5 minutes, to allow the grains to swell and absorb the stock.

    4. If you are serving this warm, stir in the rest of the oil and the remaining ingredients now. Otherwise, leave the couscous to cool and chill in the refrigerator for 1 hour, then add all the other ingredients for a delicious cold couscous salad.

      Ingredients

      • 1 Broccoli
      • 200g Couscous
      • 250g Halloumi Cheese
      • 3 tomatoes
      • ½ lemon
      • Handful Corriander
      • 1 tbsp olive oil for drizzling
      • 1 tsp Cinnamon
      • 1 tsp corriander seed
      • 1tsp cumin seed
      • 300ml Vegetable Stock Cube

      Method

      1. Dry fry cumin and corriander seeds for 30 secs then crush.

      2. Trim the brocolli and seperate into small florets.

      3. Set large pan of water to boil (will be used for steaming the brocolli and for stock).

      4. Combine spices and couscous.

      5. Make up stock using cube and the water you have boiled. Pour stock over couscous mix and leave for 5 mins.

      6. Steam the brocolli for 3 mins.

      7. Slice and griddle the halloumi for 2 mins each side.

      8. Mix all ingredients other than halloumi and olive oil.

      9. Serve topped with halloumi and drizzled with olive oil.

        • 250g couscous
        • 1tsp cumin
        • 100g sultanas
        • 1 lemon, zest and juice
        • 400ml boiling water
        • small bunch fresh mint

        Method

        1. 1. The boiling water in a saucepan over the hob.

        2. 2. Mix all the other ingredients in a bowl.

        3. 3. Pour all the ingredients into the water.

        4. 4. Stir well and cover for 5 minutes, until all the water has been absorbed.

        5. 5. Stir in some mint and serve.
