    Ingredients

    • 3 Eggs
    • 2 cups Flour
    • 2 cups Milk
    • pinch or two Salt

    Method

    1. Place flour and salt in a bowl add the eggs and milk. Whisk together for about 5 mins until the mixture is well blended together into a relatively thick but pourable paste.

    2. Heat up a large frying pan and place a generous knob of butter into the pan. When the butter has melted use a large spoon or ladle and pour just enough mixture into the pan to cover the base of the pan. The secret of French pancakes is that they should be very thin.

    3. Once the pancake has formed (set) in the pan and cooked for a few mins simply turn it over and allow to cook on the other side. Cook both sides until golden brown.

    4. Once the pancake is cooked simply add your favorite topping - savory or sweet, its up to you. I like to use tuna and cheese on my savory pancakes and ice-cream, Syrup and strawberries or chocolate sauce on my sweet pancakes.

      Ingredients

      • 1½ cup white flour
      • ½ cup whole wheat pastry flour
      • pinch of salt
      • 4 large eggs
      • 2¼ cups plain unsweetened soymilk

      Method

      1. 1. In a medium bowl, combine the flours and salt. Whisk in the eggs and 1/3 cup of the soymilk, mixing until there are lumps in the batter. Whisk the soymilk into the batter, 1/3 cup at a time, until the batter resembles a thick cream. Let the batter rest for 1 hour in the refrigerator.

      2. 2. Heat a small to medium frying pan over medium heat. Once hot, brush a small amount of oil or dairy-free soy margarine on the surface of the pan. Using a ¼ cup scoop or small ladle, add about 3 T. of batter to the pan, rotating the pan to distribute the batter evenly over the pan. Cook the crepe for about 2 minutes on the first side, or until the edges begin to brown slightly. Using a spatula or your fingers, flip the crepe and cook on the opposite side for 1 minute more. Transfer the crepe to a plate and cover loosely with a paper towel to keep warm while you make the rest of the crepes. Serve warm or at room temperature with syrup or fillings of your choice.

        • 1 cup Plain flour
        • 1 Pinch Salt
        • 3 Eggs
        • 1¾ Cups Milk
        •  Vegetable Oil
        • 6 tbs Currants
        • ½ Cup Sugar
        • Juice of 2 Lemons

        Method

        1. 1. Put the flour, salt, eggs, and milk in a bowl and beat at medium speed until blended. The mixture will be a thin batter.

        2. 2. Lightly grease a frying pan allow to get hot.

        3. 3. Pour batter into the pan, tipping it so that it coats the bottom. Sprinkle all over with 1/2 tbs currants. Cook the first side until it is golden brown. Turn the crepe with a spatula and cook the other side.

        4. 3. Turn the crepe out onto a large plate, sprinkle with sugar and lemon juice, and roll up.

        5. 4. Continue with remaining batter. Keep crepes warm in a 200°F oven when all cooked serve with ice cream.

        6. This recipe will make a dozen or more.
