Ingredients
- ALL YOU NEED
- 40ml vegetable oil
- ½ to 1 ltr Water
- 1 teaspoon Fennel Seeds
- 2 or 3 peeled clove of garlic
- 2 x 225g whole onions. peeled (four large)
- ½ Carrot coarsely chopped
- ½ green pepper chopped
- 1 teaspoon salt
Method
- 1. Put the oil and water in to a 2.25 litre (4 pint) saucepan and bring to a simmer.
- 2. Lower the heat and add the onions, fennel and garlic stirring as needed until they have become translucent.
- 3. Simmer for about 20 minutes.
- 4. Add the salt.
- 5. Mulch the mixture down using a hand blender or jug blender, until you achieve a thin-like puree.

Ingredients
- 1 large bottle of mayo
- ¼ bottle of mild chutney
- ¼ bottle of strong chutney
- pinch salt and sugar
- 1 tspn tumeric
- 2-3 tspns curry powder
Method
- 1. Mix all the ingredients above but the curry powder and tumeric well with an egg beater.
- 2. Mix the curry powder and tumeric together with some cold water and bring to the boil, then mix with the other mixture.
- 3. Best served with fish!
Ingredients
- 40g Butter
- 2 Green onions,sliced
- 1tbsp Finely chopped lemon grass
- 1tbsp Mild curry powder
- 400ml can Coconut cream
- 1tbsp Chopped fresh coriander leaves
Method
- 1)melt butter in a small pan,add onions and lemon grass,cook stirring until lemon grass is soft.add curry powder cook stirring until fragrant,then stir in the coconut cream,simmer stirring until mixture thickens.stir in coriander.
- 2)best made just before serving.
