    Ingredients

    •  
    • ALL YOU NEED
    • 40ml vegetable oil
    • ½ to 1 ltr Water
    • 1 teaspoon Fennel Seeds
    • 2 or 3 peeled clove of garlic
    • 2 x 225g whole onions. peeled (four large)
    • ½ Carrot coarsely chopped
    • ½ green pepper chopped
    • 1 teaspoon salt

    Method

    1. 1. Put the oil and water in to a 2.25 litre (4 pint) saucepan and bring to a simmer.
    2. 2. Lower the heat and add the onions, fennel and garlic stirring as needed until they have become translucent.
    3. 3. Simmer for about 20 minutes.
    4. 4. Add the salt.
    5. 5. Mulch the mixture down using a hand blender or jug blender, until you achieve a thin-like puree.

      • 1 large bottle of mayo
      • ¼ bottle of mild chutney
      • ¼ bottle of strong chutney
      • pinch salt and sugar
      • 1 tspn tumeric
      • 2-3 tspns curry powder

      Method

      1. 1. Mix all the ingredients above but the curry powder and tumeric well with an egg beater.
      2. 2. Mix the curry powder and tumeric together with some cold water and bring to the boil, then mix with the other mixture.
      3. 3. Best served with fish!

        • 40g Butter
        • 2 Green onions,sliced
        • 1tbsp Finely chopped lemon grass
        • 1tbsp Mild curry powder
        • 400ml can Coconut cream
        • 1tbsp Chopped fresh coriander leaves

        Method

        1. 1)melt butter in a small pan,add onions and lemon grass,cook stirring until lemon grass is soft.add curry powder cook stirring until fragrant,then stir in the coconut cream,simmer stirring until mixture thickens.stir in coriander.
        2. 2)best made just before serving.
