Ingredients
- 1 litre milk
- 8 egg yolks
- 140g caster sugar
- 3 tbsp cornflour
- 3 tbsp plain flour
Method
- 1. Heat up the milk in a saucepan.
- 2. In a large bowl, mix up all the other ingredients to a smooth paste.
- 3. Pour the milk slowly over the paste and mix.
- 4. Put everything back in the saucepan and place over a low heat until it thickens, stirring gently continuously.

- 600ML/1PT FULL FAT MILK
- 4 tsp cornflour
- 400ml/14floz double cream
- 1 egg@ plus 5 yolks
- 1 tsp vanilla extract
- 140g/5oz caster sugar
- 4 tsp Cointreau
Method
- 1. Add a little milk to the cornflour until you have a
- smooth paste. Gradually stir in a little more milk until
- quite runny, then scrape into a large saucepan
- 2. Whisk in the remaining milk, cream, egg, yolks, vanilla
- and sugar. Put over a low to medium heat and, stirring or
- whisking constantly, bring just to the boil until
- thickened.
- 3. Sieve into a jug and stir in the Cointreau.
- You can make this up a head ahead if you want - just
- lay a sheet of cling film directly on the surface of
- the custard to stop a skin forming. To serve gently
- reheat

Really simple but tasty! I'm not good with eggs but even I managed this and family was v impressed
Ingredients
- 600 mil Full Fat Milk
- 1 Vanilla Pod
- 3 Egg Yolks
- 2 tsp Cornflour
- 25 g Caster Sugar
Method
- Heat the milk with the vanilla pod till just boiling.
- Mix together the egg yolks, sugar & cornflour till you get a smooth paste then gradually pour over the vanilla infused milk, stirring well.
- Strain the mixture back into a clean saucepan & cook gently, stirring constantly, until the custard thickens.
