Easter biscuit recipes

Ingredients
- 12 oz Plain flour
- 0.25 tsp. Salt
- 1 tsp. Mixed spice
- 6 oz Butter
- 4 oz Caster sugar
- 1 tbsp. Lemon juice
- 1 Egg. beaten
- 1 tbsp. Milk
- 3 oz Chocolate chips
Method
- 1. Sift flour, salt and spice into a bowl
- 2. Rub in butter, add sugar, chocolate chips and lemon juice
- 3. Beat egg and milk, add to make the dough
- 4. Roll out just 5mm thick
- 5. Cut out biscuits and transfer to lightly greased baking sheets
- 6. Bake at 375F, Gas Mark 5, 190C for 10-12 minutes
- 7. Cool on a wire rack

I admit it is a bit different, but I think that there are plenty of families that still celebrate the Christian aspect of Easter, so I thought it would be worth posting it a a recipe and you can add your own style to how you present it to your kids. Abit of fun!

I was forwarded this recipe by one of my colleagues in pampered chef and while I realise that not everyone celebrates the Christian celebration, I like to take my children to church and to share the real story with them. Chocolate eggs are delicious, but I like to focus on why we celebrate Easter and the culture behind it.
Ingredients
- 1 cup whole pecans or walnuts
- 1 cup sugar
- 1 tsp vinegar
- Zip-type bag or other secure bag
- 3 x egg whites
- Pinch of salt
Method
- Easter Story Cookies
- Zip-type bag or other secure bag
- wooden spoon
- Tape
- Preheat oven to 300 degrees. Put pecans in baggie and let children beat them with wooden spoon. Explain that after Christ was arrested, He was beaten. Read John 19:1-3.
- Let children smell the vinegar. Put vinegar in mixing bowl. Explain that Jesus was thirsty on the cross and was given vinegar to drink. Read John 19:28-30.
- Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11.
- Sprinkle a little salt in each child's hand, let children taste the salt and then put a pinch in the bowl. Explain that this represents the salty tears shed by Jesus' followers and the bitterness of our own sin. Read Luke 23:27.
- Now, add 1 cup of sugar and explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to seek Him - pray to Him and praise Him (in song and in prayer). Read Psalms 34:8 and John 3:16.
- Beat with mixer on high speed for about 12-15 minutes until stiff peaks are formed. Explain the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. Read Isaiah 1:18 and John 3:1-3.
- Fold in broken nuts. Drop by teaspoons onto wax paper-covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matthew 27:57-60.
- Put cookie sheet in oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matthew 27:65-66.
- Go to bed. Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' friends were so sad when the tomb was sealed. Read John 16:20 and 22.
- On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow. On the first Easter Jesus' followers were amazed to find the tomb open and empty. Read Matthew 28:1-10. HE HAS RISEN!

Ingredients
- 150g butter, softened
- 125g caster sugar, plus extra for sprinkling
- 1 lemon, grated rind
- 2 egg yolks
- 250g plain flour
- ½tsp mixed flour
- 40g currants
- 10g mixed chopped citrus peel
Method
- 1. Preheat oven the to 170°C/150°C fan/ gas 3.
- 2. In a large mixing bowl, beat the butter, sugar and lemon rind until creamy, beat in the egg yolks until smooth, then beat in the flour, spice, currants and mixed peel.
- 3. Gather the mixture together with your hands to make a soft dough.
- 4. Turn on to a lightly floured work surface and roll out to the thickness of a £1 coin. Using a 10cm fluted pastry cutter, cut out about 20 biscuits, re-rolling all the trimmings until the dough is used up.
- 5. Place on baking trays spaced a little apart, and bake for 15-18 minutes until just turning golden.
- 6. Sprinkle with caster sugar while still warm, then lift on to a wire rack to cool. Store in a cake tin for up to 1 week. As a finishing touch, stack 3 or 4 together and tie with thin ribbon.
