Ingredients
- 500g (1lb) Raw king prawns
- Marinade
- 1 Small onion, finely chopped
- 2 Cloves garlic, crushed
- 1 Teaspoon Fresh ginger, chopped
- 55mL (2fl oz) Dry sherry
- 55mL (2fl oz) Olive oil
- Salt and freshly grounded black pepper
- 12 Bamboo skewers (soaked in water for 30 minutes)
Method
- 1) Wash prawns thoroughly. Do not remove shells.
- 2) Mix together ingredients to make marinade. Pour over prawns, and let stand for 1-2 hours in refrigerator.
- 3)Thread prawns on to skewers. Grill or barbecue for about 10 minutes (turning several times to not overcook the prawns!)

- 300g raw king prawns , peeled and butterflied
- a small handful Parsley chopped
- a large pinch Chilli Flakes
- 2 tbsp olive oil
- 2 garlic cloves, thinly sliced
- 2 tbsp dry sherry
Method
- 1.Heat the oven to 220C/fan 200C/gas 7.
- 2.Divide the prawns, garlic, chilli, sherry and olive oil between 2 small ovenproof dishes.
- 3.Cook for 6-8 minutes until pink and sizzling.
- 4.Sprinkle with the parsley and serve with crusty bread.

- 400g (14 oz) Spinach washed and destalked
- 1 Medium onion, finely chopped
- 2 Medium tomatoes, finely chopped
- 2 TSP Olive oil
- 100g (3½ oz) Raw king prawns, peeled
- Salt and pepper to taste
- 125ml( 4fl o) Milk
- 125ml (4fl oz) Double cream
- 4 Eggs
Method
- 1) Cook the spinach in the water that clings to the leaves after washing, in a covered saucepan over a medium heat for about 4 minutes. Drain and wring the excess water out by pressing the cooked leaves between two dinner plates - spinach must be very dry. Set aside.
- 2)Saute the onion and tomatoes in the olive oil until tender. Turn the heat up to make some of the liquid evaporates. Add the spinach and prawns, season and stir. Cook over a low heat for a few minutes, then cool.
- 3) Put the prawns and spinach mixture into a blender and add the milk, cream and eggs. Whirl until smooth and creamy. Taste for seasoning.
- 4) Pour the mixture into a lightly oiled loaf tin and bake in a bain-marie at 180* (350*F) Gas mark 4 for about 45 minutes, unitl firm. To test if the loaf is cooked, insert a skewer into the center - it should come out clean. Cool then refrigerate for at leat 2 hours.
- 5) To serve unmould and cut into slices of desired thickness.

sounds great - although when I cook prawns on the bbq they always seem to drop through the grating! Where can you get Bamboo skewers from?
