    • 1 cup plain flour
    • 1 cup butter
    • 1 cup caster sugar
    • 1 egg
    • ½ tsp baking powder
    • 1 tsp Vanilla Extract
    •  
    • FOR THE BUTTER CREAM
    • 150g butter
    • 200g icing sugar

    Method

    1. Preheat your oven to 180 degrees.

    2. In a mixing bowl mix together the sugar and butter until smooth, add the egg, vanilla extract, baking powder, flour and mix together.

    3. Divide the mixture between 12 cupcake cases, placed in a cupcake tray. Place in the oven for 20 minutes.

    4. Once cooked place them somewhere for them to cool.

    5. For the butter cream mix together 150g butter 200g icing sugar.

    6. Once the cakes have cooled, cut a circle out on top of each one, fill with the butter cream and then place the circle back on top.

      Tips

      Fill your cake cases 1/2 to 2/3 full. Don't overmix your batter. Bring all ingredients to room temperature before mixing your batter. If the cakes aren't finished cooking after 15 mins, place them back in the oven for some additional cooking time. Cakes are done when a toothpick inserted in the centre comes out clean. Place your cake pan in the very centre of your oven.

      • CAKE MIXTURE
      • 150g butter
      • 150g sugar
      • 3 beaten eggs
      • 1 tsp vanilla extract
      • 1 tbs milk
      •  
      • TOPPING
      • 100g butter
      • 175g icing sugar
      • 1 tsp vanilla extract

      Method

      1. Preheat the oven to 180C/160C fan/ gas 4.
      2. Cream together the butter and sugar until light, fluffy and pale.
      3. Gradually mix in the beaten egg alternating with the flour to stop the mix from curdling. Finally, stir through the vanilla extract and milk.
      4. Place 12 -15 paper cake cases into a muffin tin and divide the mixture between them.
      5. Bake for 15 minutes until golden and springy to the touch. Remove from the oven and cool on a wire rack.

      6. For the frosting: In a mixing bowl beat the butter with a spoon or spatular until smooth, then start to sift in the icing sugar, stirring regularly. Add the vanilla extract and milk. The frosting should be light and creamy.
      7. Mix your chosen food colouring colours into the icing to give an even colour.
      8. Once the cakes are totally cool, spoon or pipe the icing onto your cupcakes and finish with your chosen decorations. Then allow to set for at least 30 minutes.

        This recipe will make approximately 12 cupcakes.

        Ingredients

        • 4 ozs self raising flour
        • 2 eggs
        • 4 ozs caster sugar
        • 4 ozs butter
        • few drops Vanilla Extract
        • 1 tsp baking powder

        Method

        1. 1. Mix all the ingredients together. (I put all the ingredients in a bowl and use an electric table top mixer)
        2. 2. Spoon into cupcake cases filling about 3/4 full
        3. 2. Bake at 160C for approximately 12- 15 minutes in a pre-heated oven.
