          Description

There are loads of recipes for chicken/steak fajitas, but prawns make a delicious Mexican filling. I make my fajitas using Discovery spices as l think the taste is more authentic!

          Method

          1. Coat prawns in oil and fajita seasoning mix and put to one side, heat a heavy based frying pan until very hot and add prawns. Fry the raw prawns for about 3 minutes until browned but avoid overcooking them. Add onion and peppers and cook for a further couple of minutes. Easy to serve - warm the tortillas an fill with your favourite Mexican sauces and sides.
