    Ingredients

    • 4 mangoes, sliced
    • 5 passion fruit
    • 300g carton soured cream
    • 2 eggs lightly beaten
    • 2 tbsp. castor sugar
    • 2 tbsp. plain flour
    •  
    • TOPPING
    • 2/3 cup flour
    • 1/3 cup brown sugar
    • 1/3 cup coconut
    • 1 tsp. grated lemon rind
    • ½ tsp. ground cinnamon
    • 90g butter

    Method

    1. 1. Combine mangoes and passion fruit pulp in shallow ovenproof dish.
    2. 2. Combine sour cream, eggs, sugar and flour in a bowl and beat with a wooden spoon.
    3. 3. Pour over mango mixture, sprinkle with TOPPING.
    4. 4. For TOPPING combine flour, sugar, coconut, lemon rind and cinnamon, and rub in butter.
    5. 5. Bake in moderate oven for 30 mins or until set and golden brown.
    6. 6. Serve warm or cold with whipped cream or ice cream.

      Ingredients

      • 400 g Pears. peeled
      • 1 Juice of lemon
      • 150 g Caster sugar
      • 400 g Blackberries
      • 100 g Clover. softened
      • 3 tbsp. Plain or spelt flour
      • 30 g Pine nuts
      • 70 g Ground almonds
      • 100 g pack 5 Seed mix

      Method

      1. 1. Pre-heat the oven to 200C, fan 180C, gas 6.

      2. 2. Slice the pears into 8, lengthways and place in a bowl with the lemon juice, 100g of the sugar and the blackberries. Toss together and spoon into a generously greased (with Clover) 2 litre capacity shallow dish.

      3. 3. Make the crumble topping by softening the Clover further with a spatula in a bowl.

      4. 4. Then add the remaining sugar, flour, pine nuts, ground almonds and 5 seed mix. Thoroughly blend together with the spatula, pressing against the sides of the bowl to thoroughly combine until the mixture forms large clumps.

      5. 5. Tip over the fruit and spread out on the top. Place the dish on an oven tray, in case the juices spill over, and bake in the oven for 25-30 minutes until the fruit is tender and the crumble is golden. Serve with ice-cream or hot custard.

          Tried this dish in the autumn and have since made it several times using oatmeal instead of oats. So tasty!

          I've been making this as one of my family's favourite recipes for years!!!! But I use all sorts of available fruit...
          Their favourite is blueberries and apple.
          Sometime I caramelise the fruit first...try it with caramelised nectarines .. I'll put that recipe on the site.

        Ingredients

        • 200g blackberries
        • 3 large apples
        • 200g flour
        • 150g sugar
        • 100g butter
        • 50g oats
        • 2 tbsp brow sugar

        Method

        1. 1. Put a layer of blackberries in a large dish that goes in the oven.

        2. 2. Cover with a layer of diced apple (after removing the peel and core).

        3. 4. Sprinkle on a little brown sugar.

        4. 5. Mix the flour, butter, sugar and oats until combined to a crumb-like texture.

        5. 6. Spoon the topping mixture over the fruit

        6. 7. Bake (180C) until top goes toasty brown
