Tips
To test if the mixture is ready drop a spoonful into a bowl of ice water and leave for a minute - if you can pick it up as a ball it is ready - if it is still liquidy through your fingers cook it some more I use an electric hand beater to beat the fudge
Ingredients
- 500g Demarera sugar
- 1 tin condensed milk
- 100g unsalted butter
- 150ml water
Method
- 1. Pour condensed milk into a large saucepan and add a cup of water to damp down the sugar. Add sugar
- 2. Add the butter and put on a high heat - stirring all the time until the mixture boils - it takes around 10 mins.
- 3. When the mixture boils - turn the heat to low and still stir (occasionally or even regularly!) for about 20 mins until the mixture thickens and turns golden brown - not dark brown.
- 4. Leave to cool for 5 mins then beat vigorously for 4-5 mins - it turns matt (not shiny) and is very gloopy (a thick gooey liquid)
- 4. Pour into a buttered shallow tin and score into squares.
- 5. When cool turn break into squares and lay onto a plate

i made this today. It looked and smelt lovely although when i added the vanilla it started to solidify real quick and by the time i had left it 5 mins it had partially solidified. So i spread it out best i could and left it to cool. It had a crumbly texture and tasted great.
Ingredients
- oil for greasing
- 300ml milk
- 350g caster sugar
- 100g unsalted butter
- 1 tsp vanilla extract
Method
- 1. Grease an 18cm square cake tin.
- 2. Put the milk, sugar and butter in a heavy-based saucepan. Heat slowly,stirring all the time,until the sugar has dissolved and the butter melted.
- 3. Bring to the boil and boil for 15-20 minutes, stirring all the time.
- 4. When the mixture reaches the soft-ball stage (115C on a sugar thermometer), remove from the heat and stir in the vanilla extract. Leave to cool for five minutes.
- 5. Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears.
- 6. Pour into the prepared tin and leave to set at room temperature(do not put in fridge)
- 7. Once set, cut the fudge into approx 36 small squares and store in a sealed container.

Delicious.Simple.Easy.Cheap
Ingredients
- 250g butter. chopped
- 1lb Caster Sugar
- a few drops or 1 vanilla pod Vanilla (any form)
Method
- Chop the butter and put into a medium sized pan and melt.Once the butter is melted stir in the sugar.Stir until sugar is full dissolved.Then add vanilla.Then keep it on a low heat for 30 secs.Pour into a greased baking tin and leave to set in the fridge.
