Ingredients
- 4oz Self raising flour
- 1tsp (rounded) Ground ginger
- 1tsp Bicarbonate soda
- 1 ½oz Granulated sugar
- 2oz Butter
- 2oz Golden Syrup
Method
- Sift the flour, ginger and bicarb soda into a bowl. Add the sugar and lightly rub in the butter.
- Add syrup and mix to a smooth paste.
- Roll into 16 balls and place on a greased baking tray. I normally need to use 2 trays for this. Make sure you leave plenty of space between the biscuits as they will spread out.
- Flatten each biscuit slightly.
- Cook for around 10 minutes at gas . If using 2 trays and they are on 2 shelves, swap them over at 5 mins to ensure they are both cooked.
- Take out of the oven and cool. Enjoy!

- 6 oz. flour
- ¼ flat tbs. carbonate soda
- 1.5 flat tbs. ground ginger
- few almonds
- 1 oz. Barbados sugar
- 1.5 oz. margarine
- 2 dessertspoonfuls golden syrup (or more if required)
- 1 tbs. treacle
Method
- 1. Sift the flour into a basin with the carbonate of soda and ground ginger.
- 2. Put the margarine in a saucepan with the treacle, golden syrup, and sugar. Dissolve them slowly but do not boil. Take the saucepan off the gas and cool the syrup before adding it to the flour.
- 3. Mix it to a stiff paste, adding a little syrup if required. Then work it into a smooth dough and roll it out.
- 4. Stamp it into rounds and place them on a baking-sheet. Press half a blanched almond in the centre of each biscuit and bake them in a very moderate oven for from ten to twelve mintues.

- 8 oz butter
- 2 oz Icing Sugar Sieved
- 8 oz plain flour
- 1 ½ tsp ground ginger
Method
- 1. Preheat oven to 375F/190C/Gas Mark 5.
- 2. In a bowl beat together butter and icing sugar until pale and creamy.
- 3. Stir in flour and ginger,mixing thoroughly.
- 4. Place mixture in a piping bag fitted with a 1/2in star nozzle.Pipe mixture,on to a lightly greased baking sheet,in a variety of shapes.
- 5. Bake it in a pre-heated oven for 20 minutes,until golden brown.
- 6. Leave on baking sheet for 5 minutes before cooling on a wire tray.
- 7. Serve dusted with icing sugar.

I cooked gas, 175 C, fan oven. Took 15 minutes? Suggest higher temp. Wait till they rise, settle down, then watch like a hawk, 'cos they burn very quickly once they settle! Delicious though

WOW... this sounds like something even my little sister would be able to cook. We are both children and obviously, like all children, we love sweet things as well so these would be wonderful for me and my sister to make.
