Ingredients
- 8oz butter
- 6oz molasses sugar
- 3 tbsp treacle
- ¼ pint milk
- 2 large eggs
- 8 pieces stem ginger (from a jar) finely chopped
- 10oz self raising flour
- 1 tbspn ground ginger
- 4 tbspn ginger syrup drained from jar
- 8oz icing sugar
- 4oz Butter
- 2 tspn lemon juice
Method
- Heat oven to 160 (gas 3). Melt butter, sugar and treacle. Take off heat and stir in the milk. Beat the eggs and add to mix with stem ginger. Add flour, ginger. Stir!
- Bake for 30 mins.
- To make icing, mix remaining ingredients together. When cake is cool, spread over cake. decorare with more stem ginger.
- This is good as a pudding or as a grown up birthday cake.

Ingredients
- 3 Large eggs beaten
- 454g tin Golden syrup
- 200g Caster sugar
- 1 Tin of hot water (tin size from syrup)
- 225g Self raising flour
- ¾ tsp Ground ginger
- 2 tsp Mixed spice
- 225g Margarine softened
- 1 tsp Bicarbonate of soda
Method
- Preheat oven to 175C
- Cream together the margarine and sugar then add the eggs and golden syrup.
- Dissolve the bicarb in the tin of hot water then add to the mixture, beating as you go.
- Gradually add the flour, ginger & mixed spice and beat well till a smooth thickish batter
- Pour into 3 greased & lined loaf tins (If you don't line them, the cakes wont come out otherwise).
- Bake for 1 hour. Leave in oven with door ajar to cool. It will help prevent sinking

- 175g Butter
- 175g Soft brown sugar
- 175g Golden syrup
- 200ml milk
- 2 eggs (whisked)
- 325g SR flour
- 2tsp Ginger
- 1tsp Cinnimon
- 1tsp Mixed spice
- 1 ½ tsp Bicarbonate of Soda
Method
- 1) Heat Oven to gas 2 / 150C and grease and line a loaf tin.
- 2)Heat sugar, syrup and butter over low heat until all melted.Remove from heat and add milk mix until smooth, then add eggs and mix in. Nex fold in dry ingredients. Pour in to loaf tin
- 3) Bake for an hour, Then cover with baking paper and cook for a further 30 mins. Until a knife comes out clean when inserted into the middle.
- 4) Remove from the oven and leave for 5 minutes.
