Mixture was very runny so I added quite a bit more flour, until still runny but not looking like a liuquid. The cakes were wrapped in Grease proof paper and still delicious and moist 3 weeks after making.

      • 3 Large eggs beaten
      • 454g tin Golden syrup
      • 200g Caster sugar
      • 1 Tin of hot water (tin size from syrup)
      • 225g Self raising flour
      • ¾ tsp Ground ginger
      • 2 tsp Mixed spice
      • 225g Margarine softened
      • 1 tsp Bicarbonate of soda

      Method

      1. Preheat oven to 175C

      2. Cream together the margarine and sugar then add the eggs and golden syrup.

      3. Dissolve the bicarb in the tin of hot water then add to the mixture, beating as you go.

      4. Gradually add the flour, ginger & mixed spice and beat well till a smooth thickish batter

      5. Pour into 3 greased & lined loaf tins (If you don't line them, the cakes wont come out otherwise).

      6. Bake for 1 hour. Leave in oven with door ajar to cool. It will help prevent sinking
