    Tips

    1) Use a mix of different sized & coloured tomatoes for even more appeal. 2) Kalamata olives are the most authentic, but any type of black olive works.

    Ingredients

    • 200 grm Baby plum/cherry tomatoes halved
    • ½ Cucumber, de-seeded and roughly chopped
    • 1 Small red onion, thinly sliced
    • 3 Spring Onions, trimmed and thinly sliced
    • 10 Black Olives, stoned and halved
    • 200 grm Feta Cheese, cubed
    • 6-8 Fresh Mint Leaves
    • 1 tspn Dried Oregano
    • 1 tbspn Red Wine Vinegar
    • 3 tbspn Greek Extra Virgin Olive Oil

    Method

    1. Put tomatoes, cucumber, red onion, spring onion, olives and feta cheese into a salad bowl and toss together with dried oregano, red wine vinegar and olive oil.

    2. Season with sea salt and freshly ground black pepper. Roughly tear mint leaves and sprinkle over salad. Leave for about 10-15 minutes to allow flavours to combine.

      Tips

      Always use plenty of olive oil and a bit of bread to dunk it all up. Olive oil is rich in Omega 3 and low in the Omega 6 (the one to watch), the meditarean diet is one of the healthiest!!!!

      Ingredients

      • 2 Large tomatoes (Beef. sweet)
      • 1 Green pepper. deseeded
      • ½ cucumber. peeled
      • 1 medium onion
      • 10 Black Olives (preferrable Kalamata)
      • plenty Extra virgin Oil
      • ½ teaspoon Oregano. dried
      • 100g Feta cheese

      Method

      1. Chop the tomatoes, cucumber and pepper into medium pieces, quite rustique if you wish.
      2. Slice the onion and put all in a bowl.
      3. Add the olives and feta cheese in a big piece or if you prefer cubed.
      4. Pour the olive oil and vinegar on top.
      5. Sprinkle with the oregano.

        Tips

        Serve with fresh bread. Add as much Feta Cheese as you like, the more the merrier as far as I'm concerned

        Ingredients

        • 3 tomatoes chopped
        • 1 Cucumber. peeled and chopped
        • 1 Onion finely chopped
        • 1 green pepper
        • 4 extra virgin olive oil spoonfulls
        • To taste feta cheese
        • To taste oregano
        • To taste freshly chopped parsley (optional)
        • To taste salt
        • Loads of Black olives

        Method

        1. Chop everything, and put in a big bowl.

        2. Crumble the feta on the top and sprinkle with oregano.

        3. My mum uses freshly chopped parsley as well.

        4. Before serving, add a spoonful of salt and the oil.

        5. The epitome of any Greek meal!
