- 1 Small red onion, thinly sliced
- 3 Spring Onions, trimmed and thinly sliced
- 10 Black Olives, stoned and halved
- 200 grm Feta Cheese, cubed
- 6-8 Fresh Mint Leaves
- 1 tspn Dried Oregano
- 1 tbspn Red Wine Vinegar
- 3 tbspn Greek Extra Virgin Olive Oil
Method
- Put tomatoes, cucumber, red onion, spring onion, olives and feta cheese into a salad bowl and toss together with dried oregano, red wine vinegar and olive oil.
- Season with sea salt and freshly ground black pepper. Roughly tear mint leaves and sprinkle over salad. Leave for about 10-15 minutes to allow flavours to combine.

Tips
Always use plenty of olive oil and a bit of bread to dunk it all up. Olive oil is rich in Omega 3 and low in the Omega 6 (the one to watch), the meditarean diet is one of the healthiest!!!!
