Ingredients
- 75g/3oz ready to eat dried prunes
- 75g/3oz ready to eat dried apricots
- 75g/3oz raisins
- 100g/3½ oz unsalted butter
- 100g/3½oz lightg muscovado sugar
- 5 tbsp clear honey
- 375g/12oz poridge oats
- 2 eggs
Method
- 1) Lightly grease a shallow square baking tin approx 11x9" and pre heat the oven to 180/350 Gas 4.
- 2) Melt the butter in a small saucepan with the sugar and honey, while waiting chop the prunes and apricots into small pieces.
- 3) Remove from the heat and stir in the oats and all the fruit until mixed, then beat in the eggs.
- 4) Turn into the tin and level off the surface. Bake for 20 minutes until golden. When done leave in the tin until cooler and cut into squares or fingers and cool completely on a wire wrack.
- These will last up to 5 days in an airtight container.
- Don't forget the mix will be soft when first removed from the oven, this is right. The flapjack toughens up when cooling. Don't be tempted to overcook.

- 1½ tsp. ground cinnamon
- 3½ cups porridge oats

- 1. Prepare a shallow baking tray.
- 2. Combine honey, brown sugar, oil and cinnamon
- in a saucepan, bring to boil.
- 3. Allow to bubble two mins. No stirring.
- 4. In a large mixing bowl combine oats and
- blueberries.
- 5. Stir in honey mixture until blended.
- 6. Tip in baking tray. Spread out evenly.
- 7. Cool in tray, cut into squares.

- 80g Brown Sugar
- 40g Butter
- 60g Margerine
- 250g Oats
- Pinch Salt
- 1 Banana
- 3 tbsp Honey
Method
- 1. Melt the butter and the Margarine in a deep saucepan over a very low heat
- 2. Add the brown sugar and 3 tablespoons of honey and mix well until you have a liquid substance.
- 3. Mix in the oats, if you find it easier add them in gradually stirring and covering the oats with the mixture.
- 4. Add a pinch of salt.
- 5. Mash the banana into a liquid pulp and mix into the oats (this will take a good few minutes to ensure that the banana is fully mixed in).
- 6. Get a knife and spread the oats evenly over a baking tray.
- 7. Place the baking tray onto the middle shelf in a preheated oven (gas mark 5, 220 C) and bake for 15 minutes, checking the progress regularly. Take out when the mixture starts turning a darker colour.
- 8. Stand for a minute or two, cut the flapjack into as many pieces as you wish.
- 9. You may find it best to leave the flapjack for a few hours to cool down although you can eat them striaight away.
