    Tips

    You won’t be able to resist the heavenly lemony smell wafting through the kitchen. In fact the smell seems to linger in the kitchen forever. Serve on an old white platter. Great served cold too.

    Ingredients

    • For the sponge -------------
    • 175g soft butter
    • 175g self-raising flour
    • 175g caster sugar
    • 3 large eggs
    • 2  lemon
    • 3 tbsp. milk
    • For the lemon syrup -------------
    • 3 lemon
    • 200g sugar

    Method

    1. Place the butter, flour, sugar, eggs, lemon zest and juice, milk in a bowl
    2. to mix together. This should be a pouring consistency. To make the
    3. syrup, boil the lemon juice, zest and sugar together. Grease the pudding
    4. basin then pour in the cool syrup then add the mix. Steam for 2 hours
    5. and serve with custard or pouring cream.

      Tips

      If not using a blender,proceed until * then place all the blender ingredients in a roomy bowl and beat together with a hand mixer until light and fluffy. Fold in the egg whites and proceed as above.

      Ingredients

      • INGREDIENTS
      • 1 Large Juicy lemon
      • 2 Large Eggs. Separated
      • 6 ozs Castor Sugar
      • 2 ozs Softened Butter
      • 2 ozs Self Raising Flour
      • ½ pint Milk

      Method

      1. Beat the egg whites in a clean grease-free bowl until stiff.

      2. *Grate the lemon rind, place in the blender with the egg yolk, sugar, butter, flour, milk and 3 tablespns of lemon juice.
      3. Blend until smooth.*

      4. Fold into the egg whites.

      5. Pour into a buttered 2pt pie dish. Place in a water bath and bake for 40 - 50 mins at 150C

      6. Serve with pouring cream or creme fraiche
