      I know the proper way to make this is with mayonnaise, but this is an alternative and has a bit of a kick with the tobasco sauce.

          Description

          You can toss peeled prawns, crab or diced white fish in this dressing, or use it as a filling for avocado pears.

          Method

          1. Beat the mayonnaise cream and tomato ketchup together, then beat in the sauces and the lemon juice. Season to taste with the salt.

          Tips

          The ingredients can be varied a little to suit your own palate, but remember to keep an eye on the consistency. A chef I used to work with insisted on adding a measure of brandy. That adds a kick but needs a little more mayonnaise or cream to thicken it up.
