    Ingredients

    •  
    • INGREDIENTS
    • ½ part dry vermouth
    • 1½ parts dry gin
    • a curl lemon rind
    • to taste cracked in ice

    Method

    1. 1. Put enough cracked ice in a jug to cover the base to a depth of 2.5cm.

    2. 2. Pour in the vermouth then the gin.

    3. 3. Stir well with the crushed ice for about 3 minutes.

    4. 4. Strain into chilled glass.

    5. 5. Top with a curl of lemon rind.

    6. 6. Serve!

      Ingredients

      • 4tbsp hot coffee
      • 3tsp Canderel
      • 1 heaped tsp cocoa powder
      • 3tbsp semi-skimmed milk
      • 1 shot vodka
      • 1 shot kalhua
      •  crushed ice

      Method

      1. 1. Mix the coffee, Canderel and cocoa powder together.  Allow to cool.
      2. 2. Pour into a cocktail shaker add the milk, vodka and Kahlua and shake.
      3. 3. Place some crushed ice into a cocktail glass then strain over the martini mixture and serve.

        Ingredients

        • 12 cardamom pods
        • 6tbsp Seville orange marmalade, plus more to serve
        • 400ml vodka
        • 125ml Cointreau
        • 4tbsp lemon juice
        •  ice to serve

        Method

        1. Bash six cardamom pods in a pestle and mortar until they split.

        2. Melt the marmalade in a pan, then whisk in the vodka. Add the crushed pods. Don't boil the mix, simply warm it for a few minutes.

        3. Leave to infuse off the heat for 20 minutes, then strain.

        4. Add the Cointreau and lemon juice and chill (or keep in the freezer).

        5. Serve in glasses with a little more marmalade in the bottom, ice and a cardamom pod floating on top.
