Ingredients
- 3 Egg Whites
- 150gr 6oz Caster Sugar
Method
- Put sheets of non-stick paper onto baking trays.
- Put egg whites into a large clean bowl.
- Beat until stiff and will stand in peaks.
- Gradually whisk in the caster sugar a tablespoon at a time, beating well after each addition.
- Spoon or pipe ovals onto the baking sheets.
- Bake at 110C for about 2 hours. They may be left in the oven until cold.

Ingredients
- FOR THE BASE
- 4 oz margarine
- 4 oz caster sugar
- 2 egg yolks
- 6 oz plain flour
- 2 apples
- FOR THE TOPPING
- 2 egg whites
- 4 oz caster sugar
- 1 tbsp. demerara sugar
Method
- 1. Set the oven to moderate.
- 2. Cream the margerine and sugar together.
- 3. Add the agg yolks, one at a time and beat well.
- 4. Mix in the flour to form a stiff dough, then press into the tin using the back of a spoon which has been dipped in hot water. Peel, core and grate the apples, then spread over the base.
- Make the topping:
- 1. Whisk the egg whites until stiff. Add half the sugar, then whisk until meringue regains stiffness.
- 2. Using metal spoon, carefully fold in remaining sugar, then spoon evenly over the apple filling.
- 3. Mark out 12 squares with a wet knife. Sprinkle the demerara sugar over the topping and bake just below centre of the oven for about 1 hour.
- 4. Cut the meringue immediately after cooking, then leave it in the tin until it is quite cool.

- 115g Icing Sugar
- 4 Large Egg Whites
Method
- 1. Oven 110 degrees C
- 2. Line 2 baking trays
- 3. Beat egg whites into stiff peaks
- 4. Add golden caster sugar dessert spoon at a time
- 5. Sieve 1/3 icing sugar and fold, repeat twice
- 6. Divide evenly onto baking trays
- 7. Bake for 1-1/2 to 1-3/4 hours. Until pale coffee colour
- 8. Allow to cool
- 9. Enjoy
