    Ingredients

    • 3 Egg Whites
    • 150gr 6oz Caster Sugar

    Method

    1. Put sheets of non-stick paper onto baking trays.

    2. Put egg whites into a large clean bowl.

    3. Beat until stiff and will stand in peaks.

    4. Gradually whisk in the caster sugar a tablespoon at a time, beating well after each addition.

    5. Spoon or pipe ovals onto the baking sheets.

    6. Bake at 110C for about 2 hours. They may be left in the oven until cold.

      • FOR THE BASE
      • 4 oz margarine
      • 4 oz caster sugar
      • 2 egg yolks
      • 6 oz plain flour
      • 2 apples
      •  
      • FOR THE TOPPING
      • 2 egg whites
      • 4 oz caster sugar
      • 1 tbsp. demerara sugar

      Method

      1. 1. Set the oven to moderate.
      2. 2. Cream the margerine and sugar together.
      3. 3. Add the agg yolks, one at a time and beat well.
      4. 4. Mix in the flour to form a stiff dough, then press into the tin using the back of a spoon which has been dipped in hot water. Peel, core and grate the apples, then spread over the base.
      5. Make the topping:
      6. 1. Whisk the egg whites until stiff. Add half the sugar, then whisk until meringue regains stiffness.
      7. 2. Using metal spoon, carefully fold in remaining sugar, then spoon evenly over the apple filling.
      8. 3. Mark out 12 squares with a wet knife. Sprinkle the demerara sugar over the topping and bake just below centre of the oven for about 1 hour.
      9. 4. Cut the meringue immediately after cooking, then leave it in the tin until it is quite cool.

        • 115g Golden Caster Sugar
        • 115g Icing Sugar
        • 4 Large Egg Whites

        Method

        1. 1. Oven 110 degrees C
        2. 2. Line 2 baking trays
        3. 3. Beat egg whites into stiff peaks
        4. 4. Add golden caster sugar dessert spoon at a time
        5. 5. Sieve 1/3 icing sugar and fold, repeat twice
        6. 6. Divide evenly onto baking trays
        7. 7. Bake for 1-1/2 to 1-3/4 hours. Until pale coffee colour
        8. 8. Allow to cool
        9. 9. Enjoy
