    Ingredients

    • 20g fresh mint
    • 4 quartered limes
    • 5tbsp demerara sugar
    • 300ml white rum
    • 600ml cloudy apple juice
    • 300ml sparkling water
    • 1 thinley sliced green apple
    •  cruched iced to serve

    Method

    1. 1. Whizz mint in a food processor with limes and demerara sugar for about 1 minute.
    2. 2. Press through a sieve into a large jug, stir in rum. (This can be chilled in advance for up to 1 day)
    3. 3. When ready to serve mix with apple juice, sparkling water, 2 limes cut into chunks, the apple and lots of crushed ice to serve. (mix well)

        Hi currymaster - looked up your recipe. You sound like a real expert - I loved your full description of your first experience fo the Chili Martini - simply have to try it - roll on drinks time tonight.

        I love Mojito! I hate it when they "short-cut" it by using sugar syrup instead of granulated sugar. It tastes different. Thanks for posting this! ciao!

      Ingredients

      • 1 tsp Sugar (powder)
      • 4 Mint Leaves (fresh)
      • 1 Lime (fresh)
      • To taste Crushed Ice
      • 2 ounces White Rum
      • 2 ounces Club Soda
      • Fresh Sprig Mint (Fresh)
      • Optional Angostura Bitters

      Method

      1. 1. Spoon the sugar into a tall glass

      2. 2. Add the mint leaves.

      3. 3. Now squeeze in the juice from the lime.

      4. 4. The mixture must now be gently mashed repeatedly with a muddler (one can also use the back of a teaspoon for this if you don't have a muddler).

      5. 5. Now add the crushed ice and then add the rum (TRY TO USE HAVANA CLUB WHITE RUM FOR THAT AUTHENTIC FLAVOUR) and topped it all of with with the club soda.

      6. 6. For people who would rather a less sweet cocktail one may add a dash of Angostura Bitters. This will significantly reduce the sweetness of the drink.

        Ingredients

        • 4 Fresh Rasperries
        • 20ml Fresh Lime Juice
        • 20ml Gomme (Sugar Syrup)
        • 10ml Elderflower Cordial
        • 50ml White Rum
        • 35ml Passion Fruit Juice
        • 6-8 leaves Fresh Mint

        Method

        1. Muddle the Raspberries in the bottom of a Boston Glass.

        2. Add the Lime Juice, Rum, Elderflower Cordial Gomme to the glass.

        3. Add Passion Fruit Juice.

        4. Add Mint Leaves, but do not muddle or break as that releases undesirable bitter flavours from the chlorophyll of the leaf.

        5. Add Crushed Ice to the top of the glass, and stir 20-25 times well. This will release the fragrance of the mint to the drink and mix all ingredients well, whilst also adding the desired dilution.

        6. Either strain into a tall Hurricane Glass, or decant with "dirty" ice into the same. Garnish with a mint sprig, and a raspberry and lime wedge speared on a cocktail stick.

        7. Ravish and enjoy.
