Why not add a mixture of nuts and dried fruits to this recipe in place of the raisins… The condensed milk is the secret ingredient in this recipe which will set your cookies out from the crowd, giving them a unique doughy soft texture in the centre and crisp edge..
Ingredients
- 225g Butter. softened
- 225g Caster sugar
- 170g tube Carnation Condensed Milk (or ½ a 397g can)
- 200g Oats
- 150g Self raising flour
- 0.5 tsp. Cinnamon
- 150g Raisins
Method
- 1. Preheat the oven to 180◦,C, 350◦,F, Gas Mark 4.
- In a large bowl, cream the butter and sugar until pale and fluffy. Stir in the condensed milk. Mix in the oats and flour and cinnamon, then work in the raisins.
- 2. Break off pieces of cookie dough, about the size of a golf ball, roll them into balls and place them onto baking trays, allowing about 4cm in between each cookie. Pat the cookies down slightly and bake for 15 minutes until pale golden. Leave to set slightly on the tray. Sit back, relax and enjoy with a cup of coffee. Your house will be filled with a sweet spiced aroma that will be hard for all the family to resist.

- 125g butter
- 200g caster sugar or demerera sugar for extra crunch!
- 1 egg
- 1tsp vanilla essence
- 100g plain flour
- ¼tsp baking powder
- ¼tsp bicarbonate of soda
- 175g oats
- 80g sultanas or raisins
Method
- 1. Cream together the butter & sugar, then beat in the egg & vanilla. Stir in the flour, bicarb & baking powder. Finally stir in the oats & fruit.
- 2. Place small dollops of mixture onto a baking tray, leaving space for them to spread. Bake in the oven at 180c/GM5 for around 8 - 10 minutes until golden brown. Leave on the tray to set for a few minutes then transfer to a rack to cool.

- 1 cup butter or margarine
- 1 ½ cups brown sugar
- 2 eggs
- ½ cup milk
- 1 ¾ cups all-purpose flour
- ¼ teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 3 cups quick-cooking rolled oats
- 1 cup raisins
- ½ cup chopped walnuts
Method
- Cream butter, sugar and eggs together till light and fluffy, and then stir in milk.
- Sift together dry Ingredients, and mix in to creamed mixture. Stir in oats , raisins and nuts.
- Drop from tablespoon 2 inches apart on a lightly greased cookie sheet.
- Bake in a hot oven (400) Gas mark 6 for about 8 minutes, cool slightly; and remove from pan. makes about 60
