Peanut cookie recipes
Ingredients
- 115g butter. softened. plus extra for greasing
- 115g crunchy peanut butter
- 115g golden caster sugar
- 115g Light Muscovado sugar
- 1 Egg - beaten
- ½ tsp Vanilla essence
- 85g plain flour
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- pinch salt
- 115g rolled oats
Method
- 1. preheat the oven to gas mark 4, then grease 3 baking sheets. place the butter and peanut butter in a bowl then beat together. beat in the caster and muscovado sugars, then gradually beat in the egg and vanilla essence.
- 2. sift the flour, bicarbonate of soda, baking powder and salt into the bowl and stir in the oats. drop spoonfuls of the mixture onto the prepared baking sheets, spaced well apart to allow spreading. flatten slightly with a fork.
- 3. bake in the preheated oven for 12 minutes, or until lightly browned. leave to cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely....
Ingredients
- 150g natural roasted peanuts, roughly chopped
- 125g Butter
- 150g caster sugar
- 1 egg
- 120g crunchy peanut butter
- 100g plain flour
- 120g Jordans Cranberry & Honey Creations Oat granola
Method
- 1. Preheat the oven to 180 C, and roast the peanuts for 12 – 15 minutes until aromatic.
- 2. Cream together the butter and sugar, until pale and creamy. Beat in the egg, then the peanut butter, then the flour and the muesli.
- 3. Lastly, fold in the peanuts.
- 4. Form small balls of dough, and set on a baking tray, lined with parchment. Bake for 12 -15 minutes, until golden.
- 5. Serve warm or cold with a fruit smoothie for a superfood snack!

Hi , ive converted the measurements to grams - hope it helps! Only thing i didnt change was the choc chips but i literally used two mugs full of choc chips- rather a lot but lovely!Cheers, enjoy

Hi, I'd like to try this recipe but I live in the UK and we do measurements by grams or ounces. Any chance you could convert them? Thanks
Ingredients
- 2 ¼ cups (280 gms) flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup (½ lb)(227 gms) butter
- ¾ cup (150 gms) sugar
- ½ cup (158gms) golden syrup
- 1 tsp vanilla
- 2 eggs
- 2 cups choc chips
- ½ cup (129 gms) peanut butter (chunky)
- ½ cup (40 gms) instant porridge oats
Method
- Beat the butter, sgar, syrup and peanut butter. Add the eggs. Gradually add the flour and baking soda and mix in the choc chips. Bake at 190 degrees c for 10-12 mins.
