Ingredients
- 1 egg white
- Small squeeze Lemon Juice
- 400g icing sugar plus extra for dusting
- 1 ½ tsp Peppermint extract
Method
- 1. Lightly beat the egg white in a bowl until foamy.
- 2. Add a drop of lemon juice and sift in the icing sugar. Add the peppermint extract and combine.
- 3. When it starts getting stiff and too tough for using spoon, bring together with your hands.
- 4. Transfer to a surface dusted with icing sugar. Dust the mixture with icing sugar too (as it gets very sticky.)Roll to 2cm thick and with a small pastry cutter cut out shapes and transfer onto a tray dusted with icing sugar to dry out. Store on greaseproff paper.

I haven't actually tried these but I make them every Christmas an d I am sure these ones will be just as good!

Something quick and easy for the kids ages 7-13 i work with in my youth club and the crinklies i work with ages 66-99
Ingredients
- 1lb Icing Sugar
- 1 egg
- Juice from half a lemon
- a little peppermint essence
Method
- Sieve the icing sugar
- Separate the yolk from the white and discard the yolk.
- Mix the white with the icing sugar with a wooden spoon till it forms lumps.
- Add the lemon juice a few drops at a time.
- Then add the peppermint essence to taste.
- Press out the mixture on grease proof paper until it is 1/4 inch thick. Cut it into shapes or simple squares.
- It will be ready to eat in the morning.

- 12 oz icing sugar. sifted
- ½ tspn peppermint essence
- Chocolate (to decorate. pipe on)
Method
- 1. mix together the egg white, sugar and essence, then turn out onto a surface dusted with icing sugar and knead until smooth.
- 2. Roll out the dough to 1/4 inch thickness, then cut into hearts and leave to dry for 24 hours.
- 3. Decorate by piping on melted chocolate if desired.
