Ingredients

- 1 tube sundried tomato paste
- 12 mini wholemeal pitta bread
- 175g ripe brie cut into thin strips
- large handful green seedless grapes halved
- 1 avocado peeled and roughly diced
- 1 handful parsley leaves roughly chopped
Method
- 1. Preheat the oven to 220C with a baking sheet placed inside to warm.
- 2. Spread the tomato paste over the mini pittas and top with sliced brie. Place on the heated baking sheet and bake on the top shelf for 5-6 mins until
- the cheese is melted and bubbly.
- 3. Remove from the oven and top with the grape halves, avocado and parsley.
- Serve immediately.

Ingredients
- 1-2 per person pittas
- 1 small tin sweetcorn
- 3-4 spring onions finely chopped
- 1 jar mayonnaise
- ½ cucumber. diced
- 1 pack wafer thin chicken or turkey
Method
- Chop the meat into thin ribbons by rolling it up and then slicing like you would a chocolate roll, then dice the cucumber and thinly slice the spring onion..add all ingredients except for pittas into a bowl add enough mayo to coat all the ingredients and mix together. Warm pittas in a toaster or under the grill, if small ones slice open or large ones cut in half to create a pocket, fill with mixture.

Ingredients
- 4 pita bread
- 1 tin tuna
- 2 spring onions
- 1 tin sweetcorn
- 2 tbsp. mayonnaise
- 2 eggs
- 1 lettuce
Method
- 1.Warm the pita breads under the grill or in the ove.Cut each pita in half to make two pouches.
- 2.In a mixing bowl,flake the tuna with a fork.Finely chop the spring onions and add to the bowl.
- 3.Add the sweetcorn and mayonnaise and mix togther.Season well.
- 4.Boil the eggs in a small pan for 1o minutes.Cool under cold running water.Peel and roughly chop the eggs and add to the mix.
- 5.Wash and slice the lettuce.Place inside each pitta pouch.
- 6.Spoon in the savoury filling.Eat now or wrap in clingfilm or foil until needed.
