Ingredients
- SPONGE
- 3 eggs
- 75g caster sugar
- 75g self raising flour. sieved twice
- FILLING
- 3 tbsp jam
- 4 tbsp whipped cream
Method
- Preheat oven 160 C
- 1. Grease and line 2 18cm sandwich tins with greaseproof paper, and grease again. Dust with flour.
- 2. Whisk the eggs and sugar together with an electric whisk until pale and quite stiff. (It should be thick enough to hold a figure 8)
- 3. Fold in flour with a metal spoon.
- 4. Pour into prepared tins. Bake for 20 minutes until well-risen and golden.
- 5. Turn onto a sheet of greaseproof paper dusted with sugar resting on a folded tea towel. Peel off lining paper and leave until cold.
- 6. Sandwich together with jam and cream.

Ingredients
- 6 Egg whites
- 6 Egg yolk
- 1 cup All purpose flour or plain flour
- 1 cup Powdered sugar
- ½ tsp Baking powder
- 2 tblsp Melted butter (optional)
- 1 tsp vanilla extract or essence
- ¼ tsp salt
- (Eqipment) baking sheet non stick spray
Method
- Pre heat the oven to 375' F for 15 mins
- Seperate the egg whites from egg yolks and beat the egg whites in the mixer or whisk the whites with a whisk
- till the whites turn fluffy and stand.(if using mixer it will take 5 mins to beat and if using whisk will take about 20 mins).
- Meanwhile also whisk the yolks also seperately.take the flour and add the baking powder,salt to it and mix together
- (you can sieve it also if you want).
- To the yolk add the sugar and butter(optional) and mix it properly.Now take the yolk mixture and fold it in the
- egg white slowly and the slowly fold the flour mixture and mix just once or twice.
- Spread this mixture on the sprayed sheet and tap it little to spread evenly and bake it in the oven for 22 to 25min
- at 375' F until done check by putting a toothpick or knife through the cake it comes out clean it's done!!!!!!!

Method
- 1.Separate your eggs.
- 2.Mix the eggs yolks with the sugar until creamy.
- 3.Beat your eggs whites to a stiff consistency.
- 4.Add few spoons of the flour to the creamy mixture (egg yolks and sugar)and then some of the stiff egg whites. Keep doing this a little at a time.
- 5.Grease your cake tin with a little butter and then to make sure the cake comes out OK give the same tin a little dusting of flour. This really helps, the cake never gets stuck.
- TIP:
- You can do this cake as big or as little as you want.
- If you only have 2 eggs then use 2 tbsp of all the other ingredients. If you have 4 eggs then 4 tbsp of all the others. You decide
