Ingredients
- 8 potatoes sliced into wedge shapes
- 3 tablespoons olive oil
- few tablespoons mixed herbs
- few tablespoons OR crushed garlic
- few tablespoons OR few tablespoons paprika/chilli
Method
- Preheat oven to around 220 degrees.
- Clean the potatoes and chop up the potatoes into wedge shapes.
- Put oil into the baking tray, put in the potatoes and mix around so covered with the oil.
- Sprinkle over either the mixed herbs, garlic or paprika/garlic. Put in the oven for around 30-40 minutes until the wedges are crisped up.
- Go with pretty much anything... Baked chicken, chilli, etc etc.
- Also nice on their own with some grated cheese on top.

Ingredients
- 4 large potatoes
- squirt lemon juice
- ¼ tsp coarse black pepper
- ¼ tsp sea salt
- 2 tbsp olive oil
- ¼ tsp red chilli flakes
Method
- 1) Wash and cut the potatoes into wedges
- 2) Mix the remaining ingredients together
- 3) Toss the wedges in the mixture and place in a non stick tray
- 4) Place in preheated oven at Gas Mark 6 or 180 degrees for 30-40 minutes
Ingredients
- 1 - 1.5kg Organic new potatoes
- 1½ teaspoons Ground cumin
- ½ - 1 teaspoon Turmeric
- 2 large Crushed garlic cloves
- up to 2 teaspoons Salt flakes
- ¼ teaspoon or more Chilli flakes
- ½ teaspoon Ground garam masala
- bunch Fresh chopped coriander
- 2 – 3 tablespoons Olive oil (not virgin)
- medium / large Fresh lemon juice
Method
- NB Quantities of ingredients vary according to taste and how many potatoes you use
- 1. Cut potatoes into wedge shapes – do not peel – and boil until cooked
- 2. In a large bowl, mix all dry ingredients
- 3. Add oil and lemon juice – stir thoroughly
- 4. Add crushed garlic – stir in thoroughly
- 5. Leave mixture on side for 10 minutes or so
- 6. Add potatoes to mixture – coat well – leave to stand for anything up to several hours (can be as little as 30 minutes)
- 7. Add coriander – mix thoroughly
- 8. Empty potatoes with mixture out onto baking tray and bake in fan oven at 200C until golden brown and crispy (approx. 20 – 30 minutes)
- Eat hot and enjoy!
