Ingredients
- 1 Tbsp Chilli Flakes
- 1 Red Chilli. deseeded and finely sliced
- 4 Garlic cloves
- 8 Spring onions
- 1 Onion
- 1 Glass Dry White Wine
- 400g Prawns
- 300g Sunblush tomatoes
- Bag of Rocket
- Some Parmesan
- 300g Spaghetti
- Few Tbsps Creme Fraiche
Method
- 1. Once chopped up, fry off the chilli, garlic, chili flakes and onion for a few minutes in some olive oil. Chop up spring onion as well
- 2. Start boiling the spaghetti in some salted water
- 3. Add the white wine to the pan
- 4. After a couple of minute, place in the spring onions, prawns and tomatoes.
- 5. After another couple of minutes, season and add rocket
- 6. Cook it for 5-10 mins or so, then add a bit of creme fraiche.
- 7. Then when spaghetti is still a little bit firm, drain and add to the frying pan with all the other stuff. Retain a bit of the pasta water to put in the mixture if it needs some liquid.
- 8. Add Parmesan to the mixture, and have some on the table

- Prawns. defrosted
- Pesto

Method
- 1. Cook the pasta as per packet instructions
- 2. Once cooked, drain
- 3. In the pan pasta was cooked, put olive oil and pesto and stir
- 4. Put pasta back in pan with prawns over a low heat
- 5. Keep stirring until pasta is coated and prawns heated through

- 200g Prawns (uncooked)
- 150g spaghetti
- ¼ tsp Chilli Flakes
- 2 tsp virgin olive oil
- 1 Clove Garlic chopped
- 75ml dry white wine
- ½ x50g Wild Rocket
Method
- 1. Cook the spaghetti in a large pan of boiling water for 10 minutes until al dente.
- 2. Meanwhile heat the oil in a small frying pan.
- 3. Add the prawns and cook over a high heat for a couple for a couple of minutes.
- 4. Add the garlic,chilli and the seasoning and cook for 1 minute.
- 5. Pour in the wine and simmer for 3-4 minutes until the prawns are cooked through, pink and opaque and the liquid reduced by half.
- 6. Drain the pasta and toss with the prawns and rocket.
