Ingredients
- 100 g plain natural probiotic yoghurt
- 100-150 ml water
- 15-20 g cucumber
- 2-3 tsp spearmint leaves, finely chopped
- 3-4 sprigs cilantro (leaves and stalks)
- ½ tsp sea salt
Method
- 1. Chop the cucumber into small pieces.
- 2. Finely chop the cilantro.
- 3. Mix all the ingredients together and beat lightly.
- 4. Leave to stand to allow the flavours to infuse, refrigerate if necessary to keep it from going bad.

Tips
It’s easy to make your own roasted cumin powder. Simply toast the seeds in a dry frying pan and remove once golden and aromatic. Coarsely grind in a pestle and mortar.

- 300g thick Greek yoghurt
- 2 tablespoons fresh mint, chopped
- ½ cucumber grated on a cheese grater and the water squeezed out
- ½ teaspoon roasted cumin powder (optional) See Tip
- juice of ½ lemon
- pinch of sugar
- salt, to taste
- few mint leaves for garnish
Method
- 1. Mix all the ingredients together in a bowl and stir. Check the seasoning and garnish with fresh mint leaves

similar to tzatziki?
Ingredients
- YOU WILL NEED:
- 1 whole Cucumber
- Salt to taste
- 5 fluid ounces Plain yogurt
Method
- Peel the cucumber and shred on a coarse grater, sprinkle lightly with salt and leave for 1 hour. Gently press off the liquid from the cucumber, mix in the yoghurt season to taste. Chill and serve with hot curries.
