Ingredients
- ½ pint water
- 5oz sugar
- 1 medium egg white
- ½ tub thawed mixed berrys
- 1 ½ tblsp lemon juice
Method
- 1) Firstly make the sugar syrup by melting sugar and water in a pan on the hob, stir until dissolved, then bring to a gentle boil or 8 minutes. Leave to cool.
- 2) Mash thawed fruits in a bowl, the put fruit through a sieve to collect juice and leave seed behind (discard seeds).
- 3)Next add the cooled sugar syrup to the fruit juice mix, then add 1 1/2 tbsp lemon juice and stir well.
- 4)Now whisk 1 egg white and add to fruit mixture.
- 5)Assemble ice cream maker that's already been frozen and set machine paddle going (very important) and then slowly add the mixture to the ice cream maker.
- 6) Run ice cream machine for 20 minutes, then turn machine off, disassemble machine and using plastic spatula take the sorbet out of the machine and serve immediately. Serves 4
- This is so soft, creamy, fruity and truly delicious! And it's not heavy on calories either so great for slimmers. Can be frozen if you don't use it all in one go.

- 1.5 pint water
- 250g sugar
- 4 oranges
Method
- 1. Put the water, sugar and grated rind from one orange in a saucepan and gently dissolve the sugar.
- 2. Rapidly boil for about 5 minutes. Allow to cool.
- 3. In the meantimes squeeze out the juice from the oranges and scrape away any extra flesh from the un-grated orange halves.
- 4. Add the strained juice to the sugar and water mixture when cool. Pour into a shallow (preferably plastic) container and put in the freezer. Stir occasionally so that lumps of ice do not form.

Tips
Also good if you add a bit of kirsch and serve with a fresh mint sprig on the top!

This sounds lovely and fresh and is so simple. I will be making it as soon as I get some raspberries. Thank you.
Ingredients
- 1lb Fresh Raspberries
- 250g Icing sugar
- 1 Fresh Lemon Juice (optional)
Method
- 1. Place the raspberies into a food processor with the icing sugar (and the juice of one lemon optional). Blend to a puree.
- 2. Transfer the mixture into an ice cream machine and churn to freeze, according to manufacturer's instructions. If you don't have an ice cream machine place mixture in container and place in the freezer.
- 3. Once frozen, remove and place into a container. Cover and store in the freezer until ready to serve. It will keep for a couple of months.
