Ingredients
- 500g Chicken fillets cut into strips or mini chicken fillets
- 1 tbsp plain flour
- 1 tsp Freshly ground black pepper
- 1 tsp paprika
- 2 tsp dried thyme
- ½ tsp Cajun seasoning
- ½ tsp powdered garlic
- 2 tbsp olive oil to fry
Method
- 1. Mix together the flour, pepper, paprika, thyme, cajun seasoning & garlic together in a shallow dish.
- 2. Place the chicken in the mix and and coat entirely with the mix.
- 3. Heat the oil in large frying pan. Place the coated chicken strips in the oil and fry for approx 6 minutes on each side until golden and crispy.
- 4. Serve with your accompaniment, with salsa as a starter or as part of a sandwich with rocket, chipotle mayonnaise and tomato.

- 2 eggs
- 5-6 cups cooking oil
- 1 tablespoon wondra flour
- 1 ½ cups milk
- ½ teaspoon soya sauce
- 1 frying chicken
- 1 small lump of ginger
Method
- 1. slice up the chiken into half vertically and into sixths horozontilly.
- 2. Grate the ginger, put the soy sauce and seseame oil into a bowl.
- 3. add the chicken to the bowl. then coat the chicken with the mixtutre.
- 4. put the ingreadients into the pan to cook. cook for 5-10 mins
- 5. they float and change colour remove then serve.

Ingredients
- 4 Medium Skinless Chicken Breast
- 1 small bag Crutons
- 350ml Milk
- 2 tbl White Vinegar
- 500 gr Shredded Parmesan
- 1tbl Paprika powder
- 1tsp salt
- 2tbl Herbs de provence
Method
- Combine all dry ingredients in bowl set aside. Mix vinegar and milk in separate bowl, stir, then allow mixture to sit for 10 minutes.
- ( Pre-heat oven to 225)
- Submerse chicken in milk solution for 20 minutes. Pat dry with paper towel. Coat individual pieces of chicken in mixture. In a medium baking dish, add 100 ml of olive oil to the bottom, place chicken in dish. Cook on one side for 20 minutes, repeat process with other side.
