Tips
This is my favourate snack food recipe and also great when you get back from the pub and dont feel like cooking up a storm.
Ingredients
- 2 Eggs
- 2 large Mushrooms
- 2 Teaspoons Water
- 1 Large Onion
- 1 Tomato
- 1 Rasher Bacon (optional)
- 2 oz Butter
- to taste salt and pepper
Method
- 1. Break the eggs into a small bowl.
- 2. Add salt and pepper and 2 teaspoons of water.
- 3. Beat with a fork to mix.
- 4. Roughly chop the onions, tomato and mushrooms.
- 5. Remove the rind from the bacon and cut the bacon into small pieces.
- 6. Put half the butter into a frying pan and heat gently.
- 7. Fry the chopped onion, tomato, mushroom and bacon.
- 8. When cooked remove from the pan with a draining spoon and add directly to the egg mixture.
- 9. Remove the pan from the heat and allow a few minutes to cool down.
- 10. Then, using a thick piece of kitchen paper, wipe round the pan to absorb the fat. Then put the remaining butter into the pan and gently heat.
- 11. Now add the egg mixture and cook until set.
- 12. Slide the Spanish Omelette out of the pan onto a plate and serve.

- 2 yellow peppers. sliced
- 1 red or white onion. sliced
- 2 tsp olive oil
- 50g chorizo sausage. sliced
- 8 large eggs
- Salt and freshly ground black pepper
Method
- 1. Salt and freshly ground black pepper
- Preheat the oven to 200°C.
- 2. Place the peppers, onion and oil in a large roasting tin and toss together. Roast for 15-20 mins or until tender.
- 3. Lightly oil a non-stick round tin. Scatter the roasted vegetables over the base of the prepared tin and stir in the chorizo.
- 4. Beat the eggs, add seasoning and pour over the vegetables and sausage.
- 5. Bake in the oven for 15 mins or until the top is golden and the eggs are set.
- 6. Leave to cool slightly before serving.

Method
- Get the potato's boiling and cooked
- Dice the tomatoes onions and peppers
- Fry the onions first to get them nice and sweet.
- Add the peppers next and then finally the tomatoes. fry all on a low to medium heat and do not fry for more than 15 mins.
- Once the potatoes are ready chop them up into 1 inch by 1 inch chunks mix in with the diced veg.
- Mix up the eggs. Add some pepper and salt.
- Mix the eggs and veg together. mix well.
- Put the heat on a very low setting. It will most likely be the lowest setting you can achieve without the heat going off.
- Cook for 15 minutes. Once cooked for 15 the egg should have become firm with only a little runny egg residual on the top. Turn the egg around, normally using a plate to flip it and cook the other side for 5 more minutes.

- Spanish omelette is actually meant to be better cold so no rush to eat it :)

Hi food_lover; if you find you are burning the bottom of the omelette, when it is just beginning to set around the edges, take it off the heat and put the frying pan under the grill - this completes the cooking of the top of the omelette without the need for messy turning, and stops the bottom being burnt - simples!

Hi caracole…. I think you must mean…. “Any decent Spanish cook will tell youâ€â€¦. next time don’t try and write English if you can’t…. and BTW this is a version of “Spanish Omelette†using ingredients that one may find around any British kitchen. Clearly, as you are an expert at this dish why don’t you post your recipe so that we can all share it - I would love to try the “real thingâ€. While you are at it do you have a good recipe for Estofado de Rez a la Catalana.

Any decent spaniard cook would tell you that spanish tortillas do not have butter and bacon, we use olive oil and good jamon serrano instead.
Also, the basic "tortills espaniola" only has eggs, potatoes, onions, salt and pepper. Do not call it spanish the next time please.

Hi Fayezee - yes, I have heard of a version with Chorizo sausage. I think that addition would certainly turn this fab dish from a snack into a full meal. Thanks for your comment sounds like a lovely addition I will give it a try!

Yeh I know what you mean! I have on occasion used margarine and that works just as well. In fact as I recall I used Clover Margarine and there was little if any noticeable difference.
