Tips
This recipe dosnt need any oil or fat to cook it in as it gets enough from the cheese, also it dosnt require any extra seasoning as the crisps are already salted. I use the really cheap supermarket crisps. If you dont like cheese, you can always stuff the chicken with some mushrooms and onions chopped and lightly fried in butter,
Ingredients
- INGREDIENTS
- 4 skinless chicken breasts
- 100 gm soft cheese with garlic and herbs
- 80 gms crushed ready salted crisps
- 1 egg beaten
Method
- Pre heat oven to 190 degrees centigrade. 374 farenheit.gas mark 5
- Slice into each chicken breast to make a pocket
- spread quarter of the soft cheese into each chicken breast
- Dip each chicken breast into beaten egg
- Put crushed crisps into a dish.
- roll the chicken breasts one at a time in the crisps until coated, being careful not to let the cheese come out
- Line a pyrex dish with foil and place the chicken breasts in it
- Place in the centre of the oven for about 45 mins
- Check to make sure thoughly cooked through before serving. Individual cooking times will vary according to the size of the chicken pieces used.

Tips
Tarragon can be replaced by Dill or parsley. Goats cheese works well instead of ricotta.

- 6 chicken breast fillets (skin on)
- 2 tbs olive oil
- 125g finely chopped mushrooms
- 40g ricotta cheese
- 2 tbs chopped fresh tarragon
- 2 slices chopped parma ham
- 1 finely chopped shallot
- salt & pepper to taste
- little melted butter
Method
- Heat oil and fry sgallot until soft but not brown. add mushrooms and cook until soft. Remove from heat and allow to cool slightly before adding the chees and parma ham. Mix well and season. Leave to cool completely.
- Loosen the skin from the chicken fillets so that one side is still attached. Spoon the stuffing under the skin and hold in place with a skewer. Place in a roasting dish skin-up. Brush with melted butter.Cook for 25 - 30 minutes until cooked through @200c/Gas 6.

Tastes great and so easy but found the mix of parma ham and mozzarella a bit salty so would probably use a different cheese next time, may have to try the roule

great recipe - I did something similar with herb and garlic roule - it works great
Ingredients
- 4 chicken breasts
- 1 ball mozzarella . sliced
- 12 cherry tomatoes
- 8 basil leaves
- 8 slices Parma ham
Method
- 1. Preheat the oven to 200 degree C.
- 2. Slice the chicken breast lengthways so that you can add the filling into the middle of the chicken breast. Season lightly with salt and pepper.
- 3. Open up the breast and lay in the middle slices of mozzarella , halved tomatoes and some torn basil leaves.
- 4. Fold the chicken breast back together and wrap with Palma Ham. Put on a baking sheet and cook for 20-25 minutes.
