      So excited to find this recipe on my first look at this site! Many thanks! Its been in my family for many years too, but I lost it! I believe that ours was slightly different,but shall try this just to see what the difference (if any!") is! I believe my Great-Grandmother used to make these and handed the recipe down! How about the Butter cakes...do u make them too???

      I made these for my dad's 91st birthday and boy did they go down a treat with young and old alike

    Ingredients

    • 1 lb Butter
    • teaspoon cinnamon
    • packet Saltanas
    • some Apricot jam
    • 1 teaspoon Cornflour
    • a few drops vanilla Essence
    • a pinch Salt
    • 2 teaspoons Baking powder
    • 8oz Castor sugar
    • 5 cups Plain flour
    • 2 Egg yolks
    • 3 Whole eggs
    • few teaspoons sugar

    Method

    1. 1. Cream butter and sugar
    2. 2. Add whole eggs and yolks - one at a time then add salt, vanilla, flour,baking powder and cornflour.
    3. 3.Roll out the dough in long rectangular sections and layer with apricot jam spread smoothly followed by sprinkly softened saltanas and then sprinkle on some cinnamon and sugar
    4. 4.Roll the dough 2 or 3 times and then cut into sections off the long sausage looking roll and bake on a baking tray at 375 degrees (gas mark 5) for about 10 minutes or until golden brown

        Intriguing name - why Stuffed Monkeys? Made today,used fine cut marmalade as had no apricot jam, but delighted with the result. Will definitely do again.

      • 1 lb Butter
      • 3 Whole eggs
      • 2 Egg Yolks
      • 8oz Caster Sugar

      • 2 teasp Baking Powder
      • ½ cup Cornflour
      • Pinch Salt
      • 1 teasp Vanilla Essence
      •  Smooth Apricot Jam
      •  Raisins
      •  Sultanas
      • Sugar. Cinnamon &

      Method

      1. Cream butter and sugar. Add whole eggs and yolks one at a time and then remaining ingredients. (To make butter biscuits - stop at this point, make dough into shapes and bake). For stuffed monkeys, roll out the dough and cut into 4 portions. Cover with the apricot jam, sprinkly the cinnamon and sugar and add raisins and sultanas. Roll up the dough into a sausage, flatten it and cut into biscuit size portions. Bake at gas 5, 375 F 180 C for about 30 - 40 minutes until golden brown.

        Ingredients

        • 250g butter
        • 2½ cups plain flour
        • ½ cup custard powder
        • 2 tsp. baking powder
        • 1 cup granulated sugar
        • pinch of salt
        • 2 eggs
        • --- jam
        • ---- mixed fruit

        Method

        1. 1. Rub butter and dry ingredients together.
        2. 2. Add eggs mix well.
        3. 3. Roll out into rectangular strips. Cover with
        4. layer of jam and fill with mixed fruits. Roll
        5. up and brush with broken eggs.
        6. 4. Bake 20 mins. on 200 until lightly brown, push
        7. into shape with a knife while hot, cool before
        8. cutting.
