Ingredients
- BAKING
- 2 tbsp oil
- 1 small onion finely chopped
- 2 breakfast mushrooms stalks removed and chopped
- few chopped sundried tomatoes
- 1oz breadcrumbs
- 1oz grated mozarella cheese
Method
- Preheat grill to medium hot.Meanwhile wash and dry mushrooms and fry in oil for 5 mins,place on kitchen paper.Fry sundried tomatoes,onion and mushroom stalks for 2-3 mins,add breadcrumbs and mix well. Fill breakfast mushrooms with mixture and top with mozzarella and grill for 5 mins till cheese is golden.
- This mixture also goes well as a topping with ciabatta.

- 125g LowLow Mature Cheddar with Cracked Black Pepper Spread
- 1 red pepper, halved and deseeded
- 2 spring onion, chopped
- 1 small courgette, diced
- 4 Portobello mushrooms
- Rocket to serve
Method
- 1. Place the cut red pepper, skin side up, under a hot grill until the skin turns black. Place into a bowl, cover with cling film and leave until cool. Peel off the blackened skin then cut the roasted red pepper into strips.
- 2. Preheat the oven to 175°C/325°F/Gas mark 3
- 3. Mix together the LowLow Mature Cheddar Spread, red pepper strips, chopped spring onion and diced courgette.
- 4. Cut the stalks out of the mushrooms and spoon the cheese mixture into each one. Cover with foil and cook for 30 -35 minutes.
- 5. Serve with the mushroom juice poured over and a few leaves of rocket.

- 1 onion chopped

- 75g fresh breadcrumbs
- 150g(5oz) blue Stilton cheese
- 1 egg beaten
- for coating Breadcrumbs
- for deep frying Oil
- for garnish lettuce
Method
- 1. Remove the stalks from the mushrooms.pair off the mushrooms ito equal sizes.
- 2. Fry the oio ad chopped mushroom stalk in melted butter.
- 3. Stir into the breadcumbs and the grated stiton.Mix well.
- 4. Put a small amount of stuffing onto each mushroom. Sandwich together in pairs,securewith cocktail sticks.
- 5. Coat each with egg and then breadcrumbs.Deep fry in hot oil for 10 min .Serve o a bed if lettuce.

I made this yesterday as the starter for my valentine dinner and we loved it. I loved it because it was so easy and quick to make and really tasty too! I may vary it next time and add some bacon too - but definitely recommend it.
