    Ingredients

    • 1 clove garlic, crushed
    • 2oz chopped onion
    • 2 tblsp olive oil
    • 4 skinless, boneless, chicken breasts, chopped into 1 inch pieces
    • ½ cup water
    • 1 tsp chicken granules
    • 1 can pineapple chunks, drained and juice reserved
    • ½ green pepper, sliced
    • 1 large tomato, cut in wedges
    • ½ cup cider vinegar
    • ½ sugar
    • 1 tblsp soy sauce
    • ½ tsp salt
    • 2 tblsp cornstarch
    • 5 cups cooked rice to serve with the dish

    Method

    1. Take a large frying pan and saute garlic and onion in the olive oil.
    2. Add chicken pieces and cook until cooked through and lightly browned.
    3. Add 1/2 cup water and chicken granules and bring to a boil. Add pineapple, green pepper, and tomato.

    4. Mix reserved pineapple juice, vinegar, sugar, soy sauce, and salt in a small bowl.
    5. Add to chicken mixture, bring to a boil , stir together cornstarch and a little more water water until smooth.
    6. Add to pan and cook until sauce is thickened.
    7. Serve with rice.

      Ingredients

      • 1 clove garlic crushed
      • 1 tsp ginger (ground)
      • ¼ tsp red pepper (finely chopped)
      • 1 ½ lbs chicken breasts
      • 1 tblsp olive oli
      • ¾ cup onion chopped
      • ½ cup Celery (diced)
      • ½ cup bell pepper (chopped)
      • 1 can pineapple chunks in juice (canned)
      • 1/3 cup soy sauce
      • 1 tblsp sherry (pref. dry)
      • 1 ½ tblsp cornstarch
      • 2 tsp brown sugar
      • ¼ cup cashew nuts (chopped) OPTIONAL

      Method

      1. 1. Cut chicken breasts into 1/2-inch pieces.

      2. 2. Heat oil in a large nonstick frying pan over medium-high heat.

      3. 3. Add garlic, ginger, red pepper, and chicken to pan and saute for 5 mins or until chicken is cooked.

      4. 4. Remove chicken mixture from pan - set aside.

      5. 5. Add onion, celery, and bell pepper to pan, and saute for 4 mins or until crisp.

      6. 6. Drain pineapple, reserving 1/2 cup juice.

      7. 7. Add 1 cup pineapple chunks to pan and allow cook for a further 30 seconds.

      8. 8. Mix the 1/2 cup juice (that you kept) with the soy sauce, sherry, cornstarch, and sugar together in a bowl and stirring the mixture with a whisk until smooth.

      9. 9. Return chicken mixture to the pan.

      10. 10. Stir in juice mixture and bring to the boil.

      11. 11. Cook for a further 1 minute.

      12. 12. OPTIONAL - Sprinkle with cashews and serve.

        Ingredients

        • 3-4 breasts chicken
        • 1 red pepper
        • 1 small tin pinapple slices in juice
        • optional baby corn
        • 100ml rice wine vinegar
        • 60-70g sugar
        • 1-2 tbsp tomato puree
        • 1-2 cloves garlic
        • 1 inch fresh ginger finely chopped
        • 1 tbsp soy sauce
        • 50-100ml stock (chicken or veg)
        • to taste salt and pepper

        Method

        1. If using fresh uncooked chicken or pork then chop and fry off first, leave to side.

        2. In sauce pan add garlic, ginger,the vinegar, sugar, tomato puree, soy sauce, chopped pinapple and its juice and stock. simmer for 10-15 minutes or until thickened slightly. Add peppers and corn.

        3. Add chicken back in.

        4. Taste and add more vinegar/sugar/stock/salt and pepper as needed.

        5. Serve with boiled rice.
