Hello comrades! Hello Ladies! The chef is back! Viva! Are you feeling saucy? Don't waste money buying expensive packet sauces full of e-numbers: make your own. It will revolutionaise your chinese cooking. *does a little bow*
Ingredients
- 4 tablespoons brown sugar
- 1 tablespoon Tomato ketchup
- 1 teaspoon soy sauce
- 100ml white or rice vinegar (rice is better!)
- 2 teaspoons cornstarch (mixed with 4 teaspoons water)
Method
- Mix that vinegar, brown sugar, ketchup, and soy sauce and bring to the boil in a small pan.
- Stir in the cornstarch and water mix, add to the other ingredients and stir to thicken.
- To jazz up your sauce add chunks of pineapple or green pepper.
- For a thicker sauce, add more cornstarch.

Ingredients
- 3 tbls dark brown soft sugar
- 3 tbls rice vinegar
- 1 tbls tomato puree
- 1 tbls ketchup
- ½ tbls soy sauce
- 1 tbls honey
- 3 tbls orange juice (fresh)
Method
- Mix altogether in small sauce pan and simmer for few minutes until thicker.
- Can use hot or cold.

- 3-4 breasts chicken
- 1 red pepper
- 1 small tin pinapple slices in juice
- optional baby corn
- 100ml rice wine vinegar
- 60-70g sugar
- 1-2 tbsp tomato puree
- 1-2 cloves garlic
- 1 inch fresh ginger finely chopped
- 1 tbsp soy sauce
- 50-100ml stock (chicken or veg)
- to taste salt and pepper
Method
- If using fresh uncooked chicken or pork then chop and fry off first, leave to side.
- In sauce pan add garlic, ginger,the vinegar, sugar, tomato puree, soy sauce, chopped pinapple and its juice and stock. simmer for 10-15 minutes or until thickened slightly. Add peppers and corn.
- Add chicken back in.
- Taste and add more vinegar/sugar/stock/salt and pepper as needed.
- Serve with boiled rice.
