Tea cake recipes
Ingredients
- 500g mixed cake fruit
- 500ml Boiling water
- 2 Teabags
- 225 g Soft brown demerara sugar
- 275 g Self raising flour
- 1 large egg
- ¾ tsp Mixed cake spice
Method
- First boil up the water and make a nice strong tea in a large bowl.
- Now add all the mixed fruit to the bowl containing the tea and allow the fruit by soaking in the tea overnight.
- When you are ready to bake your Tea Cake simply pre-heat your oven to 160 C.
- Now mix the egg, sugar and spice together and then add the flour and mix well until fully combined.
- Now using a very well-greased roasting tine (approx. 11x5 inches) spread the mixture into the tin and smooth down evenly.
- Bake for about 1 hour and 20 (to 30 mins) or until golden brown on top and springy to touch in the center.
- As soon as it is cooked turn it out onto a wire rack and allow to cool for a bit.
- Remember this cake is FANTASTIC still warm, so slice 1 to 2 inch slices and serve thickly spread with butter.

- 5 to 6 cups Flour
- 4 eggs
- 2 cups sugar
- 1 cup Butter
- 1 cup thick buttermilk
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon Vanilla Extract
Method
- Put 5 cups of flour in a large mixing bowl. Make a well in the center. Add remaining ingredients to the well of the flour. Continue until you make a stiff dough,adding more flour if needed. On a floured surface, roll out to about 1/8 inch thickness;cut out and bake on lightly greased baking sheets at 350 degrees, until brown around the edges. makes 6 to 7 dozen tea cakes.

Ingredients
- 3lb wholemeal flour
- 3oz sugar
- 3tsp salt
- 3 tsp basil
- pinch caraway seed
- 3 oz butter
- 2 oz fresh yeast
- 1 and ½ pints warm milk
- 6oz sultanas
Method
- Mix dry ingredients together, as for bread, tearing the basil leaves not chopping them.Rub in the butter.Cream the yeast with a little of the warm milk, and then add it with the rest of the milk to the dry ingredients. Mix, add the sultanas, and then knead to a smooth dough. Cover, leave in a warm place to rise-about 2 hours.
- Grease some baking trays, re knead the dough and form into tea cakes. Place on trays, brush with milk, and leave to prove for another hour. bake at 400F for 15-20 minutes.
