    Tips

    If a hotter, more highly flavored chutney is desired just add the extra ingredients that I mentioned above otherwise just leave them out. I prefer it a little hotter so generally include them.

    Ingredients

    • 2 kg tomatoes
    • 450g apples peeled. cored and chopped
    • 3 onion chopped fine
    • 550ml vinegar
    • 2 tbsp salt
    • 2 cups brown sugar
    • 1 cup Seedles Raisins
    • 1 tsp Cinnamon
    • 1 tsp dry English mustard powder
    • ½ tsp cayenne pepper
    •  
    • FOR A HOTTER, MORE HIGHLY FLAVORED CHUTNEY ADD:
    • ½ tsp cayenne
    • 2 tsp mustard
    • ½ tsp allspice
    • 2 cloves garlic crushed
    • 1 tsp cloves

    Method

    1. Chop the tomatoes and add the apples and onions.

    2. Add the remaining ingredients and cook on a medium heat until the chutney is thick, stirrring occasionally.

    3. Seal in hot sterilized jars.

      Ingredients

      • 1 red pepper
      • 1 Orange Pepper
      • 1 yellow pepper
      • 3lb (1.35kg) ripe tomatoes, plunged into boiling water for 1 minute, then skinned
      • 2 Onions roughly chopped
      • 1lb (450g) granulated sugar
      • 1 pint (600ml) white wine vinegar

      Method

      1. 1) Pre-heat the oven to gas mark 6. Put the peppers in a roasting tin and cook in the oven for 25-30 minutes until they begin to char. Remove from the oven, put in a plastic bag, and leave to cool before removing the stalks and skin, dee-seeding and roughly chopping.
      2. 2) Put the tomatoes, onions and peppers and onions in a food processor and pulse briefly until chopped, but not mushy.
      3. 3) Tip the mixture into a preserving pan, with the sugar. Cook on a low heat stirring continuously, until the sugar has dissolved. Bring to the boil, reduce to a simmer and cook for 1 - 1 1/2 hours, stirring occasionally until the mixture starts to thicken and turn jam like.
      4. 4) Ladle into warm sterilised jars. Cover each pot with a wax disk and then seal with an airtight lid.

        Ingredients

        • 3lbs green tomatoes
        • 2 pints malt vinegar
        • 1 lb sultanas
        • 1 lb sour apples
        • 1 lb onions
        • 1 teaspoon ground ginger
        • 12 oz brown sugar
        • 2 teaspoons salt
        • 1 spice bag

        Method

        1. boil chopped tomatoes, apples, onions salt and spice bag in the vinegar until thick. approx 2 hours.remove spice bag and add sugar and sultanas and ground ginger and boil for 5 minutes. pot when cool
