Tomato pasta sauce recipes

Ingredients
- 1 onion diced
- 2-3 cloves garlic finely chopped or grated
- 1 small aubergine diced
- 1 courgette diced
- 1 red pepper diced
- 1 yellow pepper diced
- 1 carrot diced
- 1-2 400g tin of chopped tomatoes
- 2 tbls tomato puree
- about 150ml vegetable stock
- 1 tbls sugar
Method
- Put onion, garlic, aubergine, courgette, red pepper, yellow pepper, carrot into large pot and cook for 5 minutes.
- Add tomato puree and tinned tomatoes. Add sugar.
- Add vegetable stock until you have thickness you want.
- Cook for about 30 minutes or until vegetables are cooked.
- If you want you can put it in a food processor so the vegetables are totally hidden.
- This can be used for a pasta sauce or add it to browned mince for a bolognese sauce or use it as a tomato sauce for pizzas.

Ingredients
- 15g Butter
- 1 Onion finely chopped
- 2 tspn Basil. dried
- 1 tspn Oregano. dried
- 400g Chopped tinned tomatoes
- 2 tblsp Tomato puree
- 125 ml Stock (pref beef but I use veg)
- 125 ml White wine
- 1 tspn Caster sugar
- to taste Black pepper
Method
- Melt butter, fry onions until soft. Add basil and oregano for 2-3 minutes. Stir in tomatoes, puree, stock, wine and sugar. Bring to boil then reduce heat and simmer, stirring occasionally for about 30 mins or until sauce has reduced a little. Season to taste with pepper.

Ingredients
- BASIC TOMATO SAUCE
- 1 500g tin Peeled plum, chopped, creamed or passatta tomatoes
- 1 Small onion
- 1 Clove of garlic
- 1 Teaspoon of sugar
- 1 Stock cube (vegetarian, beef or chicken)
- 1 Tablespoon of oil, preferably olive, but any will do
- Salt and Pepper to taste
Method
- Skin and chop onion finely - skin and crush garlic. Saute in oil 'til soft and transparent. Add crushed garlic, tomatoes, sugar, stock cube and seasoning. At this point you can slosh in some wine or sherry if you want. Cover and simmer 15/20 minutes.
- For bolognaise - brown 1lb of mincemeat after sauteing the onions and before adding the rest of the ingredients, cook for 30 minutes. For a chicken or meat casserole, brown meat or chicken with onions, add rest of ingredients and throw into a covered casserole dish and put in oven on medium for around 1 hr and 15 minutes. Really not sure about how long it would keep in jars...but i always make a big pot and then freeze it.

could you put this in jars and how long would it keep
