Delicious! Chili Tofu Burgers

    Tips

    This meal served with a little mayonnaise, extra chili sauce or tomato relish is delicious! You could even melt a little cheese on the top if you fancied it.

    Ingredients

    • 500 grams Firm Tofu
    • 100 grams green bell pepper
    • 100 grams onions
    • 6 tablespoons chilli sauce
    • ½ teaspoon sea salt
    • 2 teaspoons extra virgin olive oil
    •  pepper to taste
    •  
    • TO SERVE
    • 2 Slices Essene Bread (or any bread you want!)
    • 2 slices tomato
    • a few lettuce leaves
    • 2 slices red onion

    Method

    1. Chop the tofu, the bell pepper and the onions in small pieces.

    2. Pour oil in a pan and stir-fry the onions and the bell pepper for around 5 minutes.

    3. Then add the tofu pieces and stir-fry for another 15 minutes.

    4. Add the chilli sauce, the salt and the pepper and mix well. Add some water in case the mixture is still too dry.

    5. Only cook this as lightly as possible just to take the edge out of the raw ingredients.

    6. Blend the mixture in a blender

    7. Take small handfuls of the mixture and flatten into burger shapes

    8. lightly grill the burgers for 20mins

      Optional - add a finely chopped chilli to the mixture. If you don't have an oven-proof frying pan, simply transfer the burgers to a baking tray when they are ready for the oven. * Blitz leftover bread in a food processor and keep them in the freezer - for this recipe you can use them frozen. Or toast the blitzed breadcrumbs on a baking sheet in a 180 C oven for about 10-15 minutes. When crispy and golden, leave to cool on the tray before storing in a jar or other airtight container.

      Ingredients

      • 1 X 400 g tin Blackbeans
      • 2 heaped tbsp Chopped fresh coriander, parsley or both
      • 25 g Parmesan cheese, finely grated
      • 2 heaped tsp Grainy mustard
      • Squeeze Lemon or lime juice
      • 75 g Dried breadcrumbs ('Panko' or homemade*)
      • 2  Eggs
      • To taste Salt and pepper
      • 1 tbsp Olive oil

      Method

      1. Drain and rinse the blackbeans, then put them in a bowl and mash them a little with a fork so that some of them break up and others remain whole.
      2. Add the chopped herbs, grated Parmesan, mustard, lemon juice, eggs and seasoning and mix well together.
      3. Add the dried breadcrumbs and mix in, then leave for at least 5 minutes before forming into 4 burger shapes.They are now ready to cook. Or, you can get them to this stage in advance and keep in the fridge (up to 24 hours).
      4. To cook, preheat the oven to 190 degrees C. Heat the olive oil in a large oven-proof frying pan over a medium heat. When hot, put the burgers in the pan and cook for about 2-3 minutes on each side, until browned.
      5. Transfer the pan to the oven and bake for 12-15 minutes, until cooked through (they should be quite firm to touch).

        Tips

        i always eat this with salad but it works with most carby foods (rice, pasta, couscous) but you cant beat a burger with salad/chips.

          yeah, its fine to refreeze them, i didnt actually mean to put use frozen veg because both frozen and fresh can be refrozen in these burgers, ive tried both and using fresh veg tastes better though

          Hi in the ingredients you state to use frozen vegetables... is it okay to then refreeze the burgers ??

        • 1 egg beaten
        • 75g grated chedder or gouda
        • 150g mixed vegetables (carrots.sweetcorn.peas.cauliflower)fresh or frozen
        • 1 small onion finely chopped
        • 100g sunflower seeds
        • 1 tbsp fresh parsley. chopped
        • 25g Wholemeal Breadcrumbs

        Method

        1. 1)place all ingredients in a bowl and beat together well.
        2. 2)shape into 16 burger shapes.
        3. 3)coat with flour
        4. 4)fry for 1-2mins each side till golden brown.
