Ingredients
- 6 oz Butter or soft margarine
- 6 oz Caster sugar
- 3 Eggs
- 6 oz Self raising flour
- 1½ tsp Baking powder
- 1 Small carton Whipping cream
- as required Strawberries
- 2 7 inch Sandwich tins
Method
- 1. Lightly grease tins and line bottoms with baking parchment
- 2. Combine all the cake ingredients in a large bowl and beat well until smooth approx 2 mins
- 3.Divide the mixture between the two tins and smooth top. Bake in oven 180c for about 25 mins until cakes are golden and springy to the touch
- 4. Take cakes out of tins and put on wire racks peel off lining paper and leave to cool
- 5. Whip cream and put on bottom layer of cake
- 6. Slice strawberries and put on top of cream put other layer of cake on top and sprinkle with caster sugar
- 7. If you want to be really decadent you can put cream and more sliced strawberries on top of cake as well!!!!

Ingredients
- 100g margarine
- 100g caster sugar
- 100g self raising flour
- 2 eggs
Method
- 1. Cream margarine and sugar until fluffy
- 2. Beat in eggs one at a time adding a little flour gradually
- 3. Seperate mixture into two 18cm cake or sandwich tins
- 4. Bake on middle shelf at Gas mark 4 for 20-25 minutes
- 5. When cakes have cooled fill with jam and dust with icing sugar

- 6 oz margarine

- 1.5 tsp. baking powder
- 3 eggs
- 1 tsp. vanilla
- ICING
- 3 oz butter
- 8 oz icing sugar
- 1 tsp. vanilla
Method
- 1. Sift flour & baking powder into a bowl add margarine, sugar, eggs & vanilla, whisk well.
- 2. Divide mixture between two greased sandwich tins and bake for 20 minutes gas mark 3
- 3. Place margarine, icing sugar & vanilla in a bowl and whisk until light & fluffy 3-4 minutes.
- 4. When cakes are cold spread one half with half the butter icing and the other with jam, sandwich together and put the rest of the butter icing on the top and decorate
