Ingredients
- 6oz Marg
- 6 oz Caster Sugar
- 1 TSP Backing powder
- 6 oz Self Raising Flour
- 3 Eggs
- ½ pot Double Cream
- ½ Jar Hartleys Jam -your choice-
Method
- I just used a mixer all in together mix
- Cover the bottom of cake tins in Greese proof paper
- cook for 20-25 Mins at 150-170degrees
- Once cool spread the jam and wisk the cream untill thick and spread over place one cake on top pf the other and sprinkle some icking suger over the top!
- Make a cup of tea and enjoy!

Ingredients
- 6OZ Margerine

- 60Z self raising flour
- 1 TSP baking powder
- 3 eggs
- 1 TBSP Warm Water
- FOR THE FILLING
- Whipped double cream
- Strawberry jam
Method
- mix all ingredients together until mixture is smooth
- grease 2 cake tins
- cook for 20-25 minutes at 150-170 degrees
- When cool sandwich the cakes together with a layer of strawberry jam and whipped double cream
Ingredients
- 230g caster sugar
- 230g Softened Butter
- 4 Medium Eggs
- 1 tsp Vanilla Extract
- 230g self raising flour
- Milk
Method
- Preheat the oven to 180C/350F/Gas 4.
- Grease and line your cake tins with baking paper.
- Cream the butter and sugar in a bowl until pale and fluffy.
- Beat in the eggs, a little at a time, and mix in vanilla extract.
- Fold in flour using a spoon, adding a extra milk if needed.
- Half the mixture between the cake tins and gently spread out with a spatula to get a nice smooth surface.
- Bake for 25 minutes, or until the cake looks golden-brown.
- Remove from the oven and set aside for a while, then remove the tin and baking paper. Place onto a wire cooling rack.
- Spread one half with Jam and the other half with whipped cream and place the two halves together.
- Dust the top with icing sugar and then place halved Strawberries on top for decoration.

Hi - I like the sound of your victoria sandwich and would like to have a go at it. Mine are always a disaster and I don't know why. I wonder what size of tin you use for this amount? I have a feeling I am using too small times. thanks for your help. Sue
