      This is similar to one I make - it's yummy! I find that a good thing to do is to leave the soaked mixture for at least a couple of hours before adding other ingredients - it makes it really luscious.

    Ingredients

    • 4oz Butter
    • 1 Cup Soft Brown Sugar
    • 1lb Dates (stoned weight. chopped)
    • 1 Egg (large)
    • 1 tsp Bicarbonate of Soda
    • 1 tbsp Black Treacle
    • 3 Cups SR Flour
    • 1½ Cups Boiling Water
    • 4oz Walnuts. chopped

    Method

    1. 1. Pour the water into a bowl which has the bicarbonate of soda, butter, sugar, treacle and dates already in it. Mix it together well and let it cool slightly.

    2. 2. Add the SR flour, egg and the walnuts. Mix together well.

    3. 3. Divide the mixture between two 2lb loaf tins. Bake in a preheated oven (140 Celsius) for 1 hour, or until ready (skewer should be clean).

      • 6 oz Dates. chopped
      • 7 fl oz Boiling water
      • 1 teasp bicarbonate of soda
      • 6 oz light brown sugar
      • 2 oz Any soft cooking spread
      • 1 sm/med Egg
      • 8 oz plain flour
      • 1 teasp baking powder
      • 2 oz Walnuts. chopped

      Method

      1. Preheat the oven to 180 degrees C (or equivalent).

      2. Place dates, water and bicarbonate of soda into a bowl and leave for 5-6 mins. Combine all the other ingredients, except the walnuts, in a food processor (or make by hand by creaming the spread and sugar together well, stirring in the egg along with the flour etc). Add the date mixture and the walnuts by hand. This prevents them getting too finely chopped up in the processor.

      3. Turn into a 1 lb loaf tin and bake at 180 degrees C for 15 mins. Reduce the heat to 160 and continue until done. A skewer should come out clean when tested.

      4. When cool spead with butter and enjoy. Freezes well.

        Ingredients

        • 30 g Unsalted butter
        • 110 g Wholemeal, spelt or plain white flour
        • 1 tsp Baking powder
        • 40 g Light brown sugar (normal or muscovado)
        • 75 g Natural yogurt (I use fat free but you can use any kind)
        • 1 Egg
        • 1 Ripe banana (approx. 90 g - 120 g peeled)
        • 25 g Walnut pieces

        Method

        1. Pre-heat oven to 180 degrees C. Melt the butter in a small saucepan or in a cup in the microwave and leave to cool slightly.
        2. Sift the flour and baking powder into a bowl and add the sugar and walnuts (if the pieces are quite large, put them in a cup or small bowl and bash them up a bit with the end of a rolling pin).
        3. In a jug, whisk together the yogurt and egg with a fork, and add the melted butter.
        4. Mash the banana with a fork.
        5. Pour the yogurt mixture into the dry ingredients, add the mashed banana, and mix well to combine.
        6. Grease the insides of a small loaf tin (approx ½ KG capacity, approx 16cm X 10 cm, 7cm deep). The easiest way to do this is to wipe a pastry brush around the insides of the saucepan (or cup) that you used to melt the butter in – it’s just the right amount. Then place a piece of baking parchment in the base of the tin. Transfer the mixture to the tin and bake for about 35 minutes, until an inserted skewer comes out clean.
        7. Remove from the oven and leave in the tin for 5 minutes before turning out and removing the paper.
        8. Slice to serve, either warm, cold or toasted.
