Question: Hi there, I love cooking for friends and family but don't have much time for complicated recipes. Do you have any impressive but quick recipes you'd recommend? Thanks!

Hi there, in answer to your question, I always get 'congratulated' on my stuffed pepper recipe, which you can find in my Mydish space...it looks impressive, tastes yummy (though I say so myself!), but most of all, people think it took a long time to make, which it does not. It's filling and yummy, and you can prepare the rice filling in advance and refrigerate, so you are not stressed or pressed for time on the night. This and some jacket potatoes bunged in the oven to accompany, with some nice fresh leafy salad and avocados, make for a tasty and easy to make meal.....but then again, this is a response from a vegetarian. anna

That sounds delicious! A nice quick starter is antipasto. Much of which can be bought ready prepared. Slices of salami, parma ham, mozzerella, ripe tomatoes basil and olive oil; avacado sliced, olives and grilled artichoke hearts in oil. If you arrange it on a large serving platter, people can dig in and help themselves. If you have some fresh ciabatta it is the perfect partner, along with some cold pinot grigio. Yum - I could happily eat that now. You can make it as a starter or add a few extras so that it is a more filling supper. I'd include grilled peppers, spicy Italian sausage if making as a main course.
